Mother’s Day Breakfast in Bed: Made with Love

This Mother’s Day, don’t just say “thank you”, show it — with a cup of chai in one hand and a tray full of love in another. 

After all these years of her waking up early to pack lunch, make tiffins, and feed the family before feeding herself, this is your chance to give back a little of that love. 

So today, we’re sharing recipes for a surprise breakfast with mum, guaranteed to make her feel cherished and special. Here’s to maa, amma, aai, mumma — and every dish that tasted like love.

🍓 1. Stuffed French Toast with Cream & Strawberries

Thoda fancy, full-on delicious.

This one’s a proper showstopper. Soft bread stuffed with a creamy filling, crisped to golden perfection, and topped with strawberries. Perfect for the mum who has a sweet tooth and loves a little indulgence.

Serve with: Strong black coffee – perfect balance to the sweetness.

  1. Thinly slice the strawberries and add granulated sugar. Crush the strawberries with a fork, so it releases extra juice and will not make the toast soggy.
  2. Add the cream cheese, sour cream, lemon juice, icing sugar, and vanilla extract to a large bowl. Beat with a hand-held mixer until smooth.
  3. Add the eggs, milk, cinnamon, and vanilla and whisk until thoroughly combined.
  4. Spread a thick layer of cream cheese filling on one side of the sliced bread, leaving a 1/4-inch border all around. Arrange the strawberries in an even layer on top of the cream cheese. Spread another layer of cream cheese on a new slice of bread and place it on top of the strawberries, cream cheese down, to form a sandwich.
  5. Melt 2 tablespoons of butter in a large non-stick pan over medium heat along with a drizzle of vegetable oil. Dip one sandwich into the egg mixture, turning to coat both sides, and place it in the pan.
  6. Cook for 2-3 minutes on each side, pressing with a spatula to ensure even cooking until golden brown and crispy on each side.
  7. Serve with a few strawberry pieces and a dusting of icing sugar on top for garnish.

🍅 2. Savoury Ricotta & Tomato Toast

Quick, classy, and made with love.

No-fuss, full flavour. This toast is creamy, tangy, and topped with juicy tomatoes. You’ll have it ready before she even gets out of bed — but it’ll taste like you spent hours in the kitchen.

Pair with: A cappuccino or her favourite filter coffee.

  1. Toast the bread slices crisp in a toaster.
  2. Combine ricotta, basil, chives, 2 tablespoons oil, lemon zest, lemon juice, salt, and pepper in a food processor; process until smooth, about 1 minute.
  3. Spread the mixture evenly over the toast slices. Top with tomatoes; drizzle with the remaining 1 1/2 teaspoons oil. Garnish with additional basil and chives before serving if desired.

🥔 3. Air Fryer Crispy Potatoes with Fried Eggs

Golden outside, soft inside – just like her heart.

This one’s for all the crispy snack-loving moms out there. Baby potatoes roasted till golden, with herbs and garlic, served with a perfectly fried egg. It’s comfort food done right — simple, homely, and oh-so-satisfying.

Shortcut: Use an air fryer for less mess, more crisp.

  1. Halve the baby potatoes.
  2. Preheat the air fryer to 425°F (220°C).
  3. In a large bowl, toss the potatoes, garlic, olive oil, rosemary, parsley, and thyme. Season with salt, black pepper, and red pepper flakes.
  4. Arrange the potatoes in a single layer and bake for about 35-40 minutes until crisp and golden.
  5. Serve them with fried eggs on the side.

 

🧀 4. Masala Cheese Toast

Cheeni kam, cheese zyada — spice bhi sahi hai!

Indian-style toast with sautéed masala veggies, green chutney, and lots of melted cheese. It’s the kind of breakfast that disappears in seconds and brings back hostel memories or old-school Sunday snacks.

Serve with: Chilled badam milkshake — total winner combo.

  1. Make the green chutney by blending chilies, mint leaves, salt, and cumin.
  2. Heat oil in a pan and sauté the onion and green chili for a minute. Add chopped tomatoes and cook for another minute.
  3. Add capsicum, sweet corn, and grated carrot, cover and cook for 5 minutes.
  4. Add turmeric, red chili powder, chaat masala, crushed pepper, and salt. Mix well, then stir in the tomato ketchup and chopped coriander.
  5. Butter both sides of the bread slices and toast until golden.
  6. Flip the bread, spread 1 teaspoon of green chutney on the toasted side, then add 1 tablespoon of the prepared masala on top. Grate cheddar cheese on the masala.
  7. Cover the toast and cook for 2 minutes or until the cheese melts.
  8. Cut the toast into halves and serve.

🍌 5. Banana Pancakes with Caramelised Apples

Soft, sweet, and full of warmth — just like her hugs.

Made with atta and ripe bananas, these pancakes are healthier than you’d think and taste like pure comfort. Add caramelised apples on top, and you’ve got yourself a five-star dish that still feels like home.

Pair with: Elaichi chai or even plain doodh — Mumma style.

For the Caramelized Apples:

  1. Heat a pan over medium flame and add the chopped apples, ¼ teaspoon salt, brown sugar, and butter.
  2. Allow the butter and sugar to melt, then add lemon juice and cook on low heat. Stir occasionally until the apples become soft and the sugar caramelizes.
  3. Once done, turn off the gas and keep the caramelized apples aside.

For the Pancakes:

  1. Mash the bananas with a fork in a large bowl.
  2. Add the atta, corn flour, baking powder, sugar, and ¼ teaspoon salt. Mix well.
  3. Add the milk and stir the batter until it reaches a smooth consistency.
  4. Heat a pan over medium flame and grease with butter.
  5. Pour a ladle of the batter into the pan. Cover with a lid and cook for 2 minutes, then flip and cook until both sides are golden brown.
  6. Serve the pancakes hot with the caramelized apples on top.
