Father’s Day BBQ: Brunch-Style Bites with Dad’s Signature Touch

This Father’s Day, we’re serving up recipes that echo those familiar notes of spice, smoke, and love—no grill required. These dishes may be made in your kitchen, but the heart behind them is all his. Because when Dad cooks, it’s never just about food—it’s about the flavour of home.


🍔 Mutton Burger Patty 

He didn’t need a flame-grilled signboard to make magic—just a hot pan, the perfect blend of masalas, and a whole lot of care. This juicy, spiced mutton patty brings back memories of Dad’s towering burgers, stacked with flavour and that signature extra cheese he never forgot.

Prep time: 30 mins | Cook time: 1-1/2 hrs | Servings: 4

Ingredients:

Method:

  1. Cut the onions into thin slices and place them on one side of the pan. Sprinkle salt and pepper powder on them and cook until caramelised.
  2. Place the patties on the other side of the pan and sear on a high flame on both sides for 2-3 minutes, pressing occasionally. Remove from heat and set aside.
  3. Slice the burger bun horizontally and shred the lettuce.
  4. Heat a nonstick tawa and place the burger bun slices on it. Apply butter on both sides and toast till crisp. Remove from heat and set aside.
  5. Place a cheese slice on the base of the bun, top with shredded lettuce and caramelised onion, and place the patty on top with shredded lettuce. Drizzle mayonnaise, English mustard and tomato ketchup.
  6. Serve hot with potato wedges and grilled barbeque sauce.

🥪 Lemon Pepper Chicken Salami Sandwich 

When time was tight, Dad didn’t just make a sandwich—he made it count. Zesty lemon, bold black pepper, and crispy toasted bread come together in this quick fix that tastes like those rushed mornings turned memorable by his delicious shortcuts.

Prep time: 10 mins | Cook time: 5 mins | Servings: 2

  1. Prepare lemon pepper and mayonnaise mixture, add garlic powder and chilli flakes and mix well.
  2. Toast the bread in a pan with butter until golden.
  3. Heat the salami slices in the pan for 2 minutes on both sides.
  4. Wash lettuce, slice tomato and onion thinly.
  5. Spread lemon, pepper and mayonnaise mixture on both sides and layer with lettuce, tomato slices, cheese, salami, onion, pickled olives and mustard.  Close the sandwich and press lightly.
  6. Cut in half and serve with the remaining onion, tomato and potato chips.

🫘 Awesome-Sauce Baked Beans

There was always something slow-cooked and hearty bubbling away when Dad was in the kitchen. These baked beans, rich with spices and a mustardy punch, bring back that skillet-on-the-stove energy—warm, filling, and meant for second helpings.

  2. Stir in brown sugar, baked beans, ketchup and mustard. Cook, stirring occasionally, until hot and bubbly.
  3. Serve hot with buttered toast.

🥔 Easy Foil BBQ Potatoes

No grill? No problem. These foil-wrapped potatoes crisp up beautifully in the oven, soaking in buttery BBQ flavours that taste just like the smoky sides Dad swore by. Straight from the foil to the plate, they’re a tribute to his simple, satisfying cooking style.

  1. Preheat the oven to 200 degrees Celsius.
  2. Scrub the potatoes well and make 4 slits in it to the bottom.
  3. Slice the onions in 4 slices and insert them into the slits.
  4. Sprinkle salt and freshly ground pepper and drizzle olive oil over the potatoes.
  5. Wrap tightly in the aluminium foil.
  6. Place the foil potatoes in the oven and bake for 60 minutes.
  7. Open the packages and adjust the seasonings as required
  8. Drizzle with sour cream and chives and serve hot in the foil.
