Method

  1. Soak the kokum in 1 cup warm water for 15 to 20 minutes.
  2. Mash and squeeze the soaked kokum well to extract the tangy liquid. Strain and discard the solids.
  3. Blend the mint, green chilli and ginger with a little water until smooth.
  4. Combine the kokum extract and mint mixture in a large bowl.
  5. Add roasted cumin powder, black salt, chaat masala and salt.
  6. Add the chilled water, mix well and adjust the seasoning to taste.
  7. Refrigerate until thoroughly chilled and stir well before serving.

2. Jaljeera & Raw Mango Pani

If you love your pani extra tangy, this one is for you. Raw mango brings a sharp, mouth-watering sourness, while mint, coriander, cumin and jaljeera add layers of freshness and spice.

  1. Add the raw mango, mint, coriander, green chilli and ginger to a blender.
  2. Add a little chilled water and blend until smooth.

  4. Add jaljeera powder, roasted cumin powder, black salt and salt.
  5. Pour in the remaining chilled water and mix well.
  6. Taste and adjust the seasoning to the mango’s tartness.
  7. Refrigerate until chilled and stir well before serving.

3. Pineapple Chilli Pani

Sweet, juicy pineapple meets the heat of green chilli in this playful twist. The first note is fruity and refreshing, followed by a gentle chilli kick, while cumin, black salt and chaat masala bring it back to familiar chaat territory.

  6. Mix well and taste. Adjust the chilli, salt or lemon juice if needed.
  7. Refrigerate until thoroughly chilled before serving.

4. Beetroot Garlic Pani

For a pani that stands out on the plate, turn to beetroot. Its earthy sweetness gives the pani a vibrant colour and mellow base, while garlic adds a savoury punch. Mint, green chilli, cumin and black salt keep the flavour rooted in the familiar world of chaat.
