Instructions:

  1. In a small bowl, dissolve the yeast in warm milk and let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, combine the eggs, sugar, melted butter, orange zest, mahlepi, and mastiha (if desired), and whisk until well blended.
  3. Gradually add the flour and salt to the wet ingredients and mix until a dough forms.
  4. On a floured surface, knead the dough for approximately 8-10 minutes until it reaches a smooth and elastic consistency.
  5. Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1-2 hours or until doubled in size.
  6. After the dough has risen, deflate it and separate it into three equal portions. Roll each portion into a long rope and then weave them together into a braid.
  7. Position the braided dough onto a baking sheet that’s been lined with parchment paper. Then, loosely cover it with a kitchen towel and allow it to rise for an additional 30-45 minutes.
  8. Preheat your oven to 350°F (175°C). Beat the remaining egg and brush it over the top of the dough. If desired, decorate with blanched almonds or sesame seeds.
  9. Bake the Tsoureki in the preheated oven for 25-30 minutes or until golden brown and cooked through.
  10. Allow the bread to cool for a short while before slicing and serving. Then, savour the delightful flavours of this classic Greek Easter bread with your loved ones!
