Recipe Edition: Paneer Arbi Nest

Paneer Arbi Nest is a delightful creation by Dr. Hiral Nirmal, showcasing the often-overlooked yet nutritious vegetable, Arbi, alongside creamy Paneer. Just one look at this dish will leave you in awe! It’s a zero-oil recipe when made in an air fryer, and it contains no maida. Both Arbi and Paneer are rich in essential minerals and vitamins, making this a wholesome option. With Arbi taking centre stage instead of potatoes, this dish is truly veg-a-licious. Ingredients:

Method: 

Prepare the Mixture:

  1. Boil the Arbi and potato together until soft.
  2. Peel and mash them.
  3. Add grated paneer, spices, salt, and chopped coriander leaves. Mix everything well.

Shape the Mixture:

  1. Form small round wheel-like structures from the mixture, leaving the centre hollow.

Coat and Refrigerate:

  1. Dip each wheel in a wheat flour slurry.
  2. Coat with vermicelli.
  3. Refrigerate for 15 minutes.

Deep Fry:

  1. Preheat the air fryer to 200°C for 5 minutes.
  2. Place the prepared nests in the air fryer and cook for 10 minutes at 200°C. (If an air fryer is not available, deep fry the nests in hot oil for 15 seconds.)

Prepare Paneer Balls:

  1. Mash the homemade paneer.
  2. Add salt and black pepper powder. Mix well and form small balls that resemble eggs.

Assemble:

  1. Place the fried wheels on a serving plate.
  2. Add green chutney on top.
  3. Garnish with coriander leaves.
  4. Place three paneer balls on top of each wheel.
