Ingredients:
- Arbi 250 gms
- Homemade Paneer 50 gms
- Potato 1 medium
- Vermicelli for coating
- Spices (approx. 1 tsp each):
- Chilli Flakes
- Salt
- Red Chilli Powder
- Amchur Powder
- Dhaniya Powder
- Wheat Flour Slurry for coating (avoid using maida)
- Oil for frying
- Black Pepper Powder 1/2 tsp
- Salt to taste
- Coriander Leaves for garnishing
- Green Chutney for serving
Method:
Prepare the Mixture:
- Boil the Arbi and potato together until soft.
- Peel and mash them.
- Add grated paneer, spices, salt, and chopped coriander leaves. Mix everything well.
Shape the Mixture:
- Form small round wheel-like structures from the mixture, leaving the centre hollow.
Coat and Refrigerate:
- Dip each wheel in a wheat flour slurry.
- Coat with vermicelli.
- Refrigerate for 15 minutes.
Deep Fry:
- Preheat the air fryer to 200°C for 5 minutes.
- Place the prepared nests in the air fryer and cook for 10 minutes at 200°C. (If an air fryer is not available, deep fry the nests in hot oil for 15 seconds.)
Prepare Paneer Balls:
- Mash the homemade paneer.
- Add salt and black pepper powder. Mix well and form small balls that resemble eggs.
Assemble:
- Place the fried wheels on a serving plate.
- Add green chutney on top.
- Garnish with coriander leaves.
- Place three paneer balls on top of each wheel.
