- Jackfruit 1 cup
- Rice flour 1/2 cup
- Maida 1/2 cup
- Salt to taste
- Freshly scraped coconut 1/4 cup
- Jaggery 1/4 cup
- Cardamom powder 1/2 tsp
- Oil for greasing
Method:
- Take rice flour in a bowl. Add refined flour, salt and some water and whisk to make a semi-thick batter.
- Finely chop jackfruit and heat a non-stick pan. Grease with some oil and pour a ladleful of batter and swirl to make a thin disc. Drizzle some oil on top and roast from both sides till golden. Use the remaining batter similarly.
- Transfer on individual serving plates, put some jackfruit mixture on the side of the disc and wrap.
- Serve hot.

- Rice flour 1/4 cup
- Jaggery 1/2 cup
- Salt 1 pinch
- Ripe jackfruit 10 to 12 segments
- Cardamom powder 1 tsp
- Baking powder 1/2 tsp
- Oil for frying
- Grated coconut 1/4 cup
Method:
- Deseed the Jackfruit and chop into small pieces.
- In a blender, add salt, cardamom powder, jaggery, jackfruit pieces and grated coconut and grind to a smooth batter.
- Transfer the blended mixture into a mixing bowl and add the rice flour gradually until a smooth batter is formed.
- Heat oil in a pan and add small tablespoon-sized portions into the hot oil and fry until golden brown.
- Serve hot.

- Rice flour, dry roasted 1 cup
- Grated coconut 1/2 cup
- Salt 1 pinch
- Chopped jackfruit deseeded and chopped
- Water as required
Method
- To a wide mixing bowl, add rice flour, coconut and salt. Mix with your fingers by applying a little pressure. Add water a little at a time and knead.
- Continue adding water and mixing until the mixture resembles bread crumbs. Take a small portion in the middle of your palms and press gently, it will hold its shape.
- Keep the mixture covered for 5 minutes.
- Add the chopped jackfruit into this mixture and mix well gently to cover the fruit with the flour mix.
- Heat water in a steamer and spread the mixture on a steamer plate.
- Cover and steam for 10 minutes on a medium flame.
- Remove from the steamer and serve on a banana leaf.

Ingredients
- Idli rice 1 cup
- Jackfruit pieces 4
- Cardamom powder 1 pinch
- Grated coconut 3 tbsp
- Dry ginger powder 1 pinch
- Jaggery 3/4 cup
- Cooking soda 2 pinches
- Salt 1 pinch
- Ghee as needed
Method
- Remove the seeds and the thin skin around the jackfruit pieces and chop roughly.
- Wash and soak idli rice for 3 hours minimum.
- Drain the water from the rice completely and grind the rice jaggery, jackfruit and cardamom powder to a smooth batter.
- Transfer to a mixing bowl and add grated coconut, salt, ginger powder, and baking soda and mix well.
- Heat paniyaram pan and grease with a few drops of ghee and pour the batter in small portions in the pan.
- Cook covered on a low flame and after 2 minutes flip and cook with more ghee drizzled over.
- When both sides are golden and cooked from inside, transfer to a serving bowl.
Jackfruit Sticky Rice

Ingredients
- Glutinous sticky rice 500 gm
- Jackfruit 230 gm
- Coconut milk 200 ml
- Shredded coconut 200 gm
- Sugar 4 tbsp
- Salt 1/4 tsp
- Banana leaves
Method
- Wash the rice to remove excess starch and soak in water for at least 2 hours or overnight. Drain well and set aside.
- Deseed the jackfruit and cut into thin slices.
- Place a non-stick pan over medium heat and add coconut milk, sugar, salt and grated coconut, stir to combine and simmer for 2-3 minutes.
- Add the drained rice and and continue stirring until the milk is absorbed and add jackfruit and stir until it reaches a sticky consistency. Transfer to a large bowl and set aside.
- Wash the banana leaves and wipe with a towel. Cut into pieces so that the rice can be placed inside and can be folded into packets.
- Lightly heat the banana leaves on the open flame so that they become soft and pliable and easy to fold.
- Place about 3 tablespoons of rice in the center of the banana leaf and fold firmly into packets.
- Use a large steamer, bring water to boil and reduce the heat to medium and place the packets in the steamer, close the lid and steam for 40-45 minutes.
- Serve warm and enjoy.
