A quick fried rice packed with fluffy grains, tender edamame, vegetables and egg, finished with soy and sesame oil.

Ingredients
- 3 cups cooked long-grain rice, chilled
- 1 cup shelled edamame
- 2 eggs
- 1 red bell pepper, chopped
- 2 spring onions, chopped
- 2 garlic cloves, minced
- 2 tbsp vegetable oil
- 2 tbsp soy sauce
- ½ tsp sesame oil
- Salt, to taste
- 1 tsp sesame seeds
Method
- Heat 1 tbsp oil in a wok or large pan.
- Add spring onion whites and bell pepper. Stir-fry for 2 to 3 minutes.
- Add edamame and garlic. Cook for 1 minute.
- Push the vegetables aside and add the remaining oil.
- Crack in the eggs and scramble until just cooked.
- Add the chilled rice and toss everything together.
- Add soy sauce and sesame oil. Stir-fry on high heat for 2 to 3 minutes.
- Season to taste and garnish with spring onion greens and sesame seeds.
