1. Schezwan Paneer Naan Pizzas

Give pizza a fiery desi-Asian twist with soft naan as the base, topped with spicy Schezwan paneer, colourful vegetables and plenty of cheese. It brings together the comfort of pizza, Indian paneer and bold Sichuan-inspired flavours in one easy-to-make recipe. A Sichuan chilli-paneer naan pizza is also seen in Indian restaurant menus, making the combination particularly practical for an India-focused recipe blog.

Method

  1. Mix paneer with Schezwan sauce, soy sauce, vinegar and ginger-garlic paste.
  2. Heat oil in a pan and sauté the marinated paneer for 3 to 4 minutes.
  3. Add onion and capsicum and cook until slightly tender but still crunchy.
  4. Place the naan on a baking tray.
  5. Spread a little Schezwan sauce over each naan.
  6. Top with the paneer mixture and grated mozzarella.
  7. Bake at 200°C for 8 to 10 minutes, until the cheese melts and the edges turn crisp.
  8. Finish with spring onions, sesame seeds and chilli flakes.
  9. Slice and serve hot.

2. Orange Chicken Waffles

Crispy chicken meets fluffy waffles in this fun Chinese-American fusion. The chicken gets a sticky orange glaze, while spring onions and sesame add the finishing touch.

Method

  1. Coat the chicken: Season the chicken with salt. Dip each piece in flour, then egg and finally breadcrumbs.
  2. Cook the chicken: Heat oil in a pan over medium heat. Cook the chicken in batches for 2 to 3 minutes per side, until golden and cooked through.
  3. Make the sauce: Mix orange juice, honey, soy sauce and cornflour in a bowl.
  4. Heat oil in a clean pan. Add garlic and ginger. Sauté for 30 seconds.
  5. Add the orange mixture. Cook for 3 to 5 minutes until thick and glossy.
  6. Glaze the chicken: Add the cooked chicken to the sauce. Toss for 1 minute until well coated.
  7. Make the waffles: Mix flour, baking powder, salt and five-spice powder. In another bowl, whisk egg, milk and melted butter.
  8. Combine the wet and dry mixtures. Stir gently until just combined.
  9. Cook the batter in a preheated waffle maker until golden and crisp.
  10. Serve: Top the waffles with orange chicken. Finish with spring onions, sesame seeds and orange zest.

Serve hot for the best combination of crisp waffles and sticky orange chicken.

3. Mapo Tofu Rigatoni

Italian rigatoni meets the bold, spicy flavours of Sichuan-style Mapo Tofu. Silken tofu adds creaminess, while chilli garlic sauce, soy and ginger create a savoury, spicy sauce.

Method

  1. Blend tofu, peanut butter, soy sauce, vinegar, sugar and black pepper until smooth.
  2. Boil rigatoni in salted water until al dente. Reserve ¼ cup pasta water and drain.
  3. Heat oil in a large pan. Add garlic, ginger and spring onions. Sauté for 30 seconds.
  4. Add minced chicken or mushrooms. Cook for 5 to 6 minutes until cooked through and lightly browned.
  5. Add chilli garlic sauce, hoisin sauce, soy sauce and sugar. Stir well.
  6. Add water and simmer for 3 to 4 minutes.
  7. Stir in the cornflour slurry. Cook for 1 minute until glossy and slightly thickened.
  8. Lower the heat. Stir in the blended tofu sauce and cook gently for 2 minutes.
  9. Add rigatoni and a splash of pasta water. Toss gently until the sauce coats the pasta.
  10. Add chilli oil if using. Garnish with spring onions and sesame seeds.

4. Chinese BBQ Chicken Tacos

Crispy taco shells are loaded with sticky Chinese BBQ chicken, crunchy vegetables and a sesame slaw. A fun Chinese-American fusion that brings smoky, savoury and slightly sweet flavours to taco night.

Method

  1. Marinate the chicken: Mix chicken with hoisin sauce, soy sauce, honey, sesame oil, garlic, ginger and rice vinegar. Set aside for 15 minutes.
  2. Cook the chicken: Heat oil in a pan over medium-high heat. Add the chicken and cook for 6 to 8 minutes, turning occasionally, until cooked through and lightly caramelised.
  3. Add the vegetables: Add sliced bell pepper and cabbage. Stir-fry for 2 to 3 minutes, keeping them slightly crisp.
  4. Make the slaw: Mix cabbage, carrot, mayonnaise, rice vinegar, sesame oil, sesame seeds and salt in a bowl.
  5. Warm the shells: Heat the taco shells according to the package instructions until crisp and warm.
  6. Assemble: Fill each taco shell with the Chinese BBQ chicken and vegetables.
  7. Top and serve: Add sesame slaw and garnish with spring onions and sesame seeds. Serve immediately.
