Method
- Blend tofu, peanut butter, soy sauce, vinegar, sugar and black pepper until smooth.
- Boil rigatoni in salted water until al dente. Reserve ¼ cup pasta water and drain.
- Heat oil in a large pan. Add garlic, ginger and spring onions. Sauté for 30 seconds.
- Add minced chicken or mushrooms. Cook for 5 to 6 minutes until cooked through and lightly browned.
- Add chilli garlic sauce, hoisin sauce, soy sauce and sugar. Stir well.
- Add water and simmer for 3 to 4 minutes.
