Ingredients:
- 200 g tofu
- 250 g crushed peanuts
- 1 bottle lime juice
- 7 garlic cloves
- 1 piece minced ginger
- 2 tsp cinnamon powder
- 1 tsp soy sauce
- 1/2 tsp chilli flakes
- 2 tbsp brown sugar
- 1/4 tsp salt
- 1/2 tsp black pepper powder
- 2 tbsp coconut oil
Method:
- Whizz together all the ingredients for the satay sauce in a blender, excluding tofu and coconut oil.
- Cook the mixture in a pan with some coconut oil over medium heat for about 10-15 minutes until the sauce comes to a boil.
- Cut the tofu into long strips.
- Heat some coconut oil in a pan and place the tofu strips in it.
- Cook the tofu for 7-8 minutes, turning the pieces halfway through, until golden and with visible griddle marks.
- Spread the peanut sauce on the skewers, garnish with crushed peanuts, and serve.
