Flavour Spotlight: Tofu Satay Skewers with Peanut Sauce

Ingredients:

  • 200 g tofu
  • 250 g crushed peanuts
  • 1 bottle lime juice
  • 7 garlic cloves
  • 1 piece minced ginger
  • 2 tsp cinnamon powder
  • 1 tsp soy sauce
  • 1/2 tsp chilli flakes
  • 2 tbsp brown sugar
  • 1/4 tsp salt
  • 1/2 tsp black pepper powder
  • 2 tbsp coconut oil

Method:

  1. Whizz together all the ingredients for the satay sauce in a blender, excluding tofu and coconut oil.
  2. Cook the mixture in a pan with some coconut oil over medium heat for about 10-15 minutes until the sauce comes to a boil.
  3. Cut the tofu into long strips.
  4. Heat some coconut oil in a pan and place the tofu strips in it.
  5. Cook the tofu for 7-8 minutes, turning the pieces halfway through, until golden and with visible griddle marks.
  6. Spread the peanut sauce on the skewers, garnish with crushed peanuts, and serve.
