Ingredients:
- 4 cups all-purpose flour
- 1/2 cup warm milk
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 large eggs, plus an additional one for the egg wash
- 1 tablespoon active dry yeast
- 1/2 teaspoon salt
- Zest of 1 orange
- 1/4 teaspoon ground mahlepi (optional)
- 1/4 teaspoon ground mastiha (optional)
- Blanched almonds or sesame seeds for decoration (optional)
Instructions:
- In a small bowl, dissolve the yeast in warm milk and let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, combine the eggs, sugar, melted butter, orange zest, mahlepi, and mastiha (if desired), and whisk until well blended.
- Gradually add the flour and salt to the wet ingredients and mix until a dough forms.
- On a floured surface, knead the dough for approximately 8-10 minutes until it reaches a smooth and elastic consistency.
- Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1-2 hours or until doubled in size.
- After the dough has risen, deflate it and separate it into three equal portions. Roll each portion into a long rope and then weave them together into a braid.
- Position the braided dough onto a baking sheet that’s been lined with parchment paper. Then, loosely cover it with a kitchen towel and allow it to rise for an additional 30-45 minutes.
- Preheat your oven to 350°F (175°C). Beat the remaining egg and brush it over the top of the dough. If desired, decorate with blanched almonds or sesame seeds.
- Bake the Tsoureki in the preheated oven for 25-30 minutes or until golden brown and cooked through.
