- Take a deep pot, add the coconut water dilute it with 2 cups of water and allow it to boil. Once boiled, lower the flame and add the onions, and potatoes with some salt and allow it to simmer for about 30 minutes or so. Add the tomatoes and carrots and let it cook for another 15-20 minutes.
