Serving as an essential part of Eid al-Adha feasts, Kebab Iraqi is a culinary delight renowned for its succulent texture and robust flavours. Made from minced mutton, these kebabs are grilled over charcoal, imparting a distinct smoky essence. Seasoned with a medley of ground spices, they offer a crispy exterior and juicy, savoury interior, making them a cherished appetiser worldwide. Perfectly complementing festive meals, Kebab Iraqi promises a delicious start to any grand celebration.

Ingredients:
- 2 gs minced mutton (keema)
- 1 cup finely chopped mint leaves
- 1 cup finely chopped parsley
- 2 tbsp coriander powder
- 1 tbsp cumin powder
- 2 tsp black pepper powder
- 1 tbsp sumac
- 2 tsp red chilli powder
- 1 onion, minced
- 10 tbsp flour
- 1 tbsp lemon juice
Method:
- In a large mixing bowl, add the mutto keema, with chopped mint, parsley, coriander powder, minced onion, cumin powder and salt and mix.
- Now add black pepper powder, sumac, red chilli powder and mix well.
- Add the flour and lemon juice, adjust the flavours and then lightly knead the mixture to get a firm consistency.
- Take a scoopful of the meat mixture and shape it to form finger-like shapes. Now insert wooden skewers into the fingers.
- Gently place these kebab skewers on a charcoal barbeque. Roast on both sides until they are juicy and tender. Serve with a side salad, bread and dip of choice.
