Eid Recipe Series: Middle Eastern Fattah

Fattah, a delightful meal consists of spiced, boiled beef or mutton layered over rice and topped with crispy pita bread. It’s finished with a distinctive garlic-infused tomato sauce, adding a unique flavour. Fattah is a festive favourite, with regional variations across Egypt and the Levant, each adding its own twist to this classic dish.

Serves: 5
Total Time: 3 hours 

Ingredients: 

  • 2 cups ghee
  • 1 kg mutton, chopped
  • 2 medium onions chopped
  • 1 tsp cardamom powder
  • 2 bay leaves
  • 2 whole cups of long-grain rice 
  • 3 pita breads
  • 1 tbsp minced garlic
  • 1 cup tomato puree
  • 1 tsp cumin powder
  • 1 tbsp white wine vinegar
  • Salt and pepper to taste

Method 

  1. Heat 3 tbsp ghee in a kadhai, and sauté the chopped onions in it until golden, then add the chopped meat and fry the same. Add the bay leaves, salt and cardamom with chicken stock. Cover and cook the meat until tender. 
  2. Roast the rice grains in some ghee in a separate pan, add salt and water, and cook until the rice is tender.
  3. Cut the pieces of pita bread, and roast them in an oven or air fryer until crisp. 
  4. In a separate pan, add the remaining ghee, add the minced garlic followed by tomato puree, and season with salt, pepper, cumin powder and white wine vinegar. Add about 400ml of water and cook on low flame, until the gravy thickens. 
  5. Assemble the Fattah, by lining the pita bread at the base of the serving platter, add the cooked rice on top, and then the mutton with some stock. Finally, top with the tomato gravy and serve.
