The Internet’s Favourite Quick & Easy Desserts

It’s midnight, you’re craving something sweet, and the last thing you want is a recipe with ten steps. All four of these are ready in one sitting, no fridge-overnight waits, no oven, and barely any cleanup.

1. Chocolate Peanut Butter Rice Cakes → “Crunch Meets Melt”

A rice cake, a spoon of peanut butter, and a drizzle of melted chocolate, set in the fridge for ten minutes, and it’s ready. No cooking involved at any point.

Prep Time: 5 minutes Cook Time: 10 minutes (fridge-setting time, no flame or oven involved) Serves: 2 (2 rice cakes each)

Ingredients

  • Rice cakes — 4
  • Peanut butter — 4 tbsp
  • Dark chocolate, melted — 1/4 cup

Method

  1. Spread a thick layer of peanut butter over each rice cake.
  2. Melt the chocolate in the microwave in 20-second bursts, stirring between each, until smooth.
  3. Drizzle the melted chocolate generously over the peanut butter layer.
  4. Place the rice cakes in the fridge for 10 minutes, until the chocolate sets.
  5. Serve straight from the fridge for the best crunch.

Tip: Add a scatter of sea salt or crushed peanuts on top before the chocolate sets for extra crunch.

 

2. 3-Ingredient Oreo Cake → “Cake, Minus the Baking Skills”

Blend a pack of Oreos with milk, whisk in a pinch of baking powder, and you’ve got a mug cake that needs no sugar of its own; the biscuit cream does all the work.

Prep Time: 5 minutes Cook Time: 2 minutes Serves: 1

Ingredients

  • Oreo biscuits (cream included) — 10-12
  • Milk — 1/2 cup
  • Baking powder — 1/4 tsp

Method

  1. Break the Oreos roughly and add to a blender along with the milk.
  2. Blend until completely smooth.
  3. Whisk in the baking powder.
  4. Pour the batter into a greased mug or small microwave-safe bowl.
  5. Microwave on high for 90 seconds (microwave wattages vary, so check at 70 seconds and add time in 10-second bursts if the centre still looks wet).
  6. Let it sit for a minute before digging in. Top it with melted chocolate or powdered sugar.

Tip: No blender at hand? Crush the Oreos by hand in a ziplock bag and mix vigorously with the milk instead. Slightly chunkier, still works. 

3. Fruit Parfait Shots → “Layers, No Waiting Around”

Chocolate wafers, whipped cream, condensed milk, and sliced fruit, layered in a glass and ready to eat the moment you’re done assembling. No fridge time required.

Prep Time: 10 minutes Cook Time: None Serves: 2 (2 shot glasses each)

Ingredients

  • Chocolate wafer biscuits, roughly broken — 6-8 pieces
  • Whipped cream or whipped topping — 1/2 cup
  • Condensed milk — 3 tbsp
  • Strawberries or bananas, sliced — 1/2 cup

Method

  1. Break the chocolate wafer biscuits into small, bite-sized pieces.
  2. In small shot glasses or dessert cups, add a layer of broken wafer pieces at the bottom.
  3. Add a layer of whipped cream on top of the wafers.
  4. Drizzle a little condensed milk over the whipped cream layer.
  5. Add a layer of sliced strawberries or bananas.
  6. Repeat the layers once more, ending with a final drizzle of condensed milk and a fruit slice on top for garnish.
  7. Serve immediately, or chill for 5 minutes if you prefer it slightly colder.

Tip: Strawberries hold their texture better than banana if the parfait needs to sit for a few minutes before serving; banana tends to soften faster once layered with cream.

4. Nutella Stuffed Bread Balls → “Bread’s Glow-Up”

Flatten a slice of bread, tuck a spoonful of Nutella inside, seal, and fry for barely a minute on each side. What comes out is warm, gooey, and gone in two bites.

Prep Time: 8 minutes Cook Time: 4 minutes Serves: 2 (2 balls each)

Ingredients

  • Bread slices — 4
  • Nutella — 4 tsp
  • Oil — for shallow frying

Method

  1. Trim the crusts off the bread slices.
  2. Flatten each slice gently with a rolling pin.
  3. Place a teaspoon of Nutella in the centre of each flattened slice.
  4. Fold the edges over and roll into a tight ball, sealing the Nutella inside.
  5. Heat oil in a pan over medium flame.
  6. Shallow fry the balls, turning occasionally, until golden on all sides (about 3-4 minutes total).
  7. Drain on paper towels and serve warm.

Tip: Wet your fingers slightly while sealing the edges; it helps the bread hold together better while frying. Let the balls cool for a minute before biting in; the Nutella centre stays very hot.

All four recipes here are genuinely doable within a single midnight sitting, no advance prep, no overnight waits. Pick whichever matches what’s already sitting in your fridge.
