Recipe: Aloo Chole Waffle Chaat

Crispy on the outside and soft inside, this fun twist on aloo chole chaat gives the classic tikki a waffle makeover. A spiced potato and chole mixture is cooked until golden in a waffle maker, then loaded with chutneys, yoghurt, and crunchy toppings.

Prep time: 30 mins| Cook time: 12 mins| Serves: 2

Ingredients

  • 2 boiled potatoes, mashed
  • ½ cup boiled/cooked chickpeas
  • 1 tsp ginger-green chilli paste
  • ½ tsp cumin powder
  • ½ tsp turmeric powder
  • ½ tsp red chilli powder
  • 1–2 tbsp cornflour
  • Salt, to taste
  • Oil or ghee, for brushing

For Serving:

  • Boiled chickpeas
  • Thick yogurt
  • Green chutney
  • Sweet tamarind chutney
  • Sev
  • Chopped onion
  • Pomegranate arils

Method

  1. Mash the boiled potatoes until smooth.
  2. Add cornflour, cumin powder, turmeric powder, red chilli powder and salt.
  3. Mix well to make a soft, dough-like mixture that is easy to spread.
  4. Heat a little oil in a pan. Add the ginger-green chilli paste and sauté until fragrant.
  5. Add the boiled chickpeas, cumin powder, turmeric powder, red chilli powder and salt.
  6. Lightly mash a few chickpeas while leaving the rest whole for texture.
  7. Cook for 2–3 minutes until the mixture is fairly dry. Let it cool slightly.
  8. Gently mix the prepared chole into the potato mixture.
  9. The final mixture should be soft but firm enough to hold its shape.
  10. Preheat the waffle maker and lightly brush both plates with oil or ghee.
  11. Take a portion of the mixture and spread it evenly over the waffle plate.
  12. Close the waffle maker and cook for 5–7 minutes, until golden and crisp.
  13. Carefully remove the waffle and repeat with the remaining mixture.
  14. To Serve: Place the crispy waffle on a plate.
  15. Top with boiled chole, thick yogurt, green chutney and sweet tamarind chutney.
  16. Finish with sev, chopped onion and fresh pomegranate arils.
  17. Serve immediately for the best crunch.

Useful tip: Keep the potato-chole mixture fairly dry. Too much moisture can make the waffle soft instead of crisp.

Best with: Green chutney, sweet tamarind chutney, yogurt, sev, chopped onion and pomegranate.
