Get Creative with fresho! Coconut Water

Every year, summers come back and how! Each year we often feel the heat to be worse than the year before. With summers begin our hunt for ways to beat the heat. Understandably increasing our fluid intake is crucial, but drinking water sometimes just does not feel enough.

During such times, it is often very tempting to go ahead and gulp down a bottle of some cool sugary drinks. Worse are the ones that even claim to be ‘healthy’. It is best never to fall prey to such lures and stick to natural and healthy ways to beat the heat. Drinking natural drinks like buttermilk, fruit juices, lemon water, and coconut water is some of the best ways to beat the heat.

Coconut water is an ideal drink to consume during summer. It is a naturally refreshing drink that is loaded with electrolytes, boosts your energy levels, and hydrates the body too. What’s more? It even tastes divine! But if you feel bored of drinking just plain coconut water, or want to experiment with it, here are some delicious recipes that you can try using fresho! coconut water.

Elaneer Appam

Appams are these delicious lacy soft pancakes that are commonly eaten with coconut-based curries. Essentially made in the South Indian states of India, this delicacy is unique and tasty. It tastes even better when it is added with the taste of coconut. Here is how you can try to make them.

  • Prep Time: 6 hours
  • Cooking Time: 20 minutes
  • Serves: 12-14 appams

Ingredients:

  • Rice: 2 cups
  • Fenugreek seeds: ¼ cup
  • fresho! coconut water with pulp: 2 cups
  • Salt: as per taste
  • Sugar: as per taste
  • Dry Yeast: ¼ spoon

Procedure:

  1. Take 2 cups of any fragrant rice and soak it with the fenugreek seeds for about 2 hours. Drain the rice after soaking. Now take the coconut water with pulp and add it to a blender, add the rice along with some salt and blend. Make sure to blend into a very fine paste.
  2. Once the batter is ready, add some sugar and the yeast and mix well. Keep in a cool and dry place to ferment for a few hours. After about 4-5 hours, the batter will appear risen and frothy. Mix gently and make the batter slightly thinner than the dosa batter.
  3. Heat the appam kadai and add brush it lightly with oil, now gently pour some of the batters into the kadai and rotate it, so that it is thinly coated with the appam batter. Once cooked, do not flip the appam, but remove gently from the kadai using a spatula. Serve hot with delicious spicy or sweet stew.

Coconut Iced Coffee

This is a unique combination you never knew you needed! A delicious blend of two superb drinks together makes an even better drink! The kick of caffeine along with the hydrating and nutritional properties of coconut water are perfect together. The drink is naturally sweet, refreshing, one of a kind and absolutely worth trying this summer. What’s better is that this drink is ready in literally minutes.

  • Prep Time: 2 minutes
  • Cooking Time: 2 minutes
  • Serves: 1 glass

Ingredients:

  • fresho! Coconut Water: 1 glass
  • Coffee Concentrate: ½ cup
  • Cream: 1 spoon (optional)
  • Ice Cubes: 4-5

Procedure:

  1. Simply add the coffee concentrate to the coconut water and add ice to it. If you like to make the drink a little richer, you can add some fresh cream to it.
  2. The drink does not require any additional sugar as the natural sweetness of the coconut water is sufficient.
  3. You can transfer the drink into a fancy glass with a straw and enjoy chilled.

Coconut Water Panna Cotta

Coconut water can be fun to experiment with, as it is a naturally sweet liquid that tastes great on its own and even when combined with other ingredients to make special dishes. This coconut water and saffron panna cotta may sound like a fancy dessert and even looks like a restaurant-style dessert. But in reality, it is very easy and made in just a few easy steps. Here is how you make it.

  • Prep Time: 45 minutes
  • Cooking Time: 10-12 minutes
  • Serves: 6 people

Ingredients:

  • Fresho! Coconut Water: 1 litre
  • Agar Agar strands:  2 spoons
  • Saffron: few strands
  • Sugar: 2 tablespoons

Procedure:

  1. Soak the agar agar in a cup of water and keep it aside for about 30 minutes or so. After this boil the mix and allow it to completely dissolve, then set it aside to cool.
  2. The next step is to heat the coconut water on a low flame and add the sugar to it. Dissolve gently so that it dissolves completely. Now add the strands of saffron and mix gently. Add the agar agar mix to this and stir once again.
  3. Pour into a mould or any regular flat serving vessel and allow it to cool. Refrigerate until it is perfectly set. You can now unmould the panna cotta and cut smaller cubes and serve chilled.

Coconut Water Veggie Soup

Summers are a season when hunger pangs go for a toss, and eating heavy and greasy meals seems absolutely repulsive. We’re often on the lookout for some light meals that are delicious to eat and light on the stomach too. Here is a coconut water soup recipe that is simply perfect for those evenings when all you need is a light and tasty soup. It requires very simple ingredients and is easy to prepare too.

  • Prep Time: 10 minutes
  • Cooking Time: 50 minutes
  • Serves: 6 people

Ingredients:

  • fresho! Coconut Water with Pulp: 2 litres
  • Onions: 3 (cut into chunky pieces)
  • Potatoes: 4, medium (cut into chunky pieces)
  • Carrots: 2 (peeled and chopped)
  • Tomatoes: 2, medium size (chopped roughly)
  • Salt: to taste
  • Crushed peppercorns: 1 teaspoon
  • Water: 2 cups

Procedure:

  1. Take a deep pot, add the coconut water and dilute it with 2 cups of water and allow it to boil. Once boiled, lower the flame and add the onions, and potatoes with some salt and allow it to simmer for about 30 minutes or so. Add the tomatoes and carrots and let it cook for another 15-20 minutes.
  2. Once the vegetables in the soup seem to fall apart, add some freshly crushed peppercorns. Transfer the contents into soup bowls and serve hot.
