5 Finger-Lickin’ Savoury Strawberry Recipes

With the strawberry season in full bloom, the markets have the reddest and sweetest strawberries of the year. It is but natural, that you would want to make the most of this season.

This sweet and tart fruit is full of anti-oxidants along with a good dose of Vitamin C, potassium, folate, magnesium etc. Along with all the nutritional benefits, it is also absolutely delicious as well. 

You would have tried the common strawberry recipes like a milkshake, cake, ice cream or pudding. But if you love innovative recipes, read further to know more. 

Strawberry Cream Cheese Toasties in Sour Dough Bread 

Ever imagined pairing fresh strawberries with bread? You can replicate this recipe using a variety of bread options like croissants, regular sliced breads or any other. It pairs very well with sourdough, and so has been used here. It is a delicious and quick recipe, perfect for a high-tea programme or even for kids at home. 

Total Time: 15 minutes
Serves: 2 servings

Ingredients: 

  • 1 cup fresh strawberries 
  • 1 cup cream cheese 
  • 2 tsp sugar 
  • 2 slices of sourdough bread 
  • 2 tsp butter 
  • 3-4 fresh basil leaves 

Method: 

  1. Seasonal strawberries are sweeter, but still have that slight tart flavour, to nullify that, the cream cheese needs to be lightly sweetened. Add the cream cheese to a mixing bowl, add the sugar, and whisk it briskly so that all the sugar is completely dissolved in the cream cheese. Put the cream cheese aside. 
  2. Take the two slices of sourdough bread, apply a layer of butter on both sides and toast them well on a flat pan on medium heat. Toast until they are light golden brown and crunchy. 
  3. Chop the strawberries into small pieces and keep them aside. 
  4. Now spread a generous layer of cream cheese on each slice of sourdough bread. Top it with the chopped strawberries. 
  5. Break a few leaves of fresh basil and garnish the toasties with them. 
  6. Enjoy while fresh. 

Strawberry Salsa

Have a chip and dip party at home? Impress all your guests with this delectable dip that is one of a kind. It is sweet, tart, slightly spicy, savoury and perfect with a crunchy chip of your choice. 

Total Time: 15 minutes
Serves: 4 servings 

Ingredients: 

  • Juice of 1 full lemon 
  • 1 tsp lemon zest
  • 2 tsp honey
  • 2 cups of fresh strawberries, finely chopped
  • 1/3 cup of pickled jalapenos (thinly sliced) 
  • ½ cup finely chopped onion 
  • ½ cup freshly chopped coriander 
  • Pepper to taste
  • 1 pinch salt 

Method: 

  1. Take a large size mixing bowl, and add to it, the juice of lemon, honey and lemon zest. Using a fork quickly whisk everything together. 
  2. Add in the strawberries, onions, jalapenos and chopped fresh coriander and mix everything well. Take care to lightly toss while mixing, and avoid using too much pressure while mixing the ingredients. 
  3. Add the salt and pepper and transfer to a serving bowl. 
  4. Serving with a choice of chips. 

Strawberry Gazpacho 

When you think of a gazpacho, the mind always goes to the chilled tomato soup. But why remain conventional, when you can have a delicious creative take on the regular gazpacho? Try this strawberry gazpacho, which is tangy, chilled and packs a punch! 

Total Time: 25 minutes
Serves: 4-5 servings

Ingredients: 

  • ½ cup extra virgin olive oil 
  • 2 cloves of garlic, smashed 
  • 1 ½ cup of bread pieces cut into cubes (regular white or brown bread slices, with edges cut off) 
  • 2 sprigs thyme 
  • 6 cups of fresh strawberries, washed and chopped roughly
  • 2 cups cucumber, peeled and diced 
  • 1 ½ cup red bell peppers diced
  • ½ cup green capsicum diced 
  • ¾ cup tomato pulp 
  • 3 tbsp red wine vinegar 
  • Salt to taste
  • A few drops of tobacco sauce

Method: 

  1. Start with preparing the garlic and thyme croutons for the soup. Take a flat pan, and place it on medium heat. Add a tsp of olive oil, and add a single clove of garlic to it. Once it sizzles slightly, add the bread cubes along with sprigs of thyme. 
  2. Toss and toast the bread gently, until it turns light golden and slightly crunchy. Take care not to brown the bread too much. Once nice and crunchy, remove the bread croutons from the flame and keep them aside. 
  3. In the same pan, add the remaining olive oil, the garlic clove, bell peppers, tomato pulp, cucumber and strawberries along with the red wine vinegar. Toss everything gently for a few minutes. Then cover the mixture and allow it to cool. Let it marinate for about 1 hour minimum. 
  4. Once everything is softened, and well combined and the flavours are well marinated, blitz the entire contents into a smooth mixture. 
  5. Strain the mixture using a sieve to ensure no fibres, clumps or lumps remain. 
  6. Take the strained soup, and season it with salt and tobacco as per taste. Transfer to the refrigerator. Allow it to cool for 4-5 hours. 
  7. Once the soup is chilled, serve it cold with the bread croutons prepared earlier. 

Barbecue Strawberry Chicken

If you have a family and friends gathering, and you’re looking for something unique to prepare. Try this delectable strawberry chicken barbecue. It is one of a kind and surprisingly easy to prepare. 

Total Time: 40 minutes
Serves: 4 serving

Ingredients: 

  • 2 tbsp cooking oil
  • 4 chicken breast 
  • 2 tbsp butter 
  • ¼ onion, finely chopped onion
  • 1 cup barbecue sauce 
  • 2 tbsp brown sugar
  • 2 tbsp balsamic vinegar 
  • 2 tbsp honey 
  • 1 cup fresh strawberries, thinly sliced 

Method: 

  1. Preheat the oven to 300’C, while making other preparations. Take a saucepan, add some oil to it and place on medium flame. Place the chicken breasts on them, and cook on either side. Once the chicken breasts are cooked, remove the chicken and keep aside. 
  2. In the same pan, add some butter and allow it to melt, now add the chopped onions and sauté them for about a minute, until they turn translucent. Now add the barbecue sauce along with brown sugar, and balsamic vinegar and finally add the honey. 
  3. Bring it to a boil, and cook on a simmer until the sauce thickens. Transfer the sauce to a baking tin. Add the chicken to it. Transfer the baking tin to the oven. Bake for around 15 minutes. 
  4. After 15 minutes, remove from the oven, add the sliced strawberries and stir them in gently. 
  5. Serve immediately while warm.
