Sugarcane Juice Kheer

Sugarcane juice kheer or “Raoh ki kheer” is an innovative recipe originating from Punjab. When you have some good quality sugarcane juice, this recipe is worth trying. 

Total time: 30 minutes
Serves: 4 servings 

Ingredients: 

  • 1 cup soaked rice 
  • 3 cups Cold-pressed sugarcane juice
  • 1 pinch of cardamom powder 
  • 1 tsp ghee 
  • 8-9 whole cashews 

Method: 

  1. Take a kadhai, and place it on medium heat, add some ghee and fry the cashews on low flame until they are crunchy and golden in colour. 
  2. Remove the cashews and put them aside, in the same kadhai, add the sugarcane juice and heat it. 
  3. When slight bubbles appear on the edges of the kadhai, add the soaked rice to it. Keep stirring gently to prevent the rice grains from sticking to the bottom of the pan. 
  4. Cook until the rice is soft and well cooked in the sugarcane juice, and the consistency of the kheer thickens. Now add a pinch of cardamom powder to enhance the flavour and fragrance of the dish. 
  5. At this point, you can optionally add a pinch of salt to balance out the flavours. Be careful not to add more than a small pinch. 
  6. Add the fried cashews that were kept aside. 
  7. Transfer to a serving bowl and serve hot, or you can even chill it for some time, and serve cold.

Orange Juice Cake

This citrusy cake is made using cold-pressed orange juice and is bursting with flavour. It is fairly easy to make and is a perfect addition to your high tea party. 

Serves: 8-10 servings
Total Time: 1 hour 

Ingredients: 

  • 150 ml Cold Pressed orange juice
  • 1 tbsp orange zest
  • 1 cup granulated sugar 
  • 1 cup vegetable oil
  • 4 whole eggs 
  • 1 tsp vanilla essence
  • 3 cups maida
  • 3 tsp baking powder 
  • 1 tsp salt 

Method: 

  1. Set the oven to preheat to 300’C. At the same time, grease the cake tin sprinkle some flour over it and keep it aside. 
  2. In a large mixing bowl, crack the eggs and add the vegetable oil to them. Using a whisk, whisk well till it forms a perfect emulsion. Now add the granulated sugar and blend that into the mixture. 
  3. Add the vanilla essence and mix well. 
  4. Sieve together the maida and baking powder along with salt. Now add his sieved contents into the wet mixture. 
  5. Very gently fold it in. Now add the orange zest and fold that in as well. Finally, add the orange juice and slowly mix it in. 
  6. Take care not to stir it very vigorously after adding the juice. 
  7. Transfer the contents to the ready baking tin. Place in the oven and bake for about 50 minutes or until the cake is fully cooked. 
  8. You can insert a toothpick to check if the cake is done. If it comes out dry, it means the cake is done.
  9. Let it cool for a few minutes, then gently de-mould it. Cut into desired slices and enjoy. 

Spiced Mango Mocktail

This is a mouthwatering spicy mango treat that is a treat for your taste buds! Just use some good quality cold-pressed mango juice with a handful of ingredients and you’re ready to enjoy! 

Serves: 1
Time: 2 minutes 

Ingredients: 

  • 1 glass of cold-pressed mango juice
  • 1 tsp lemon juice 
  • ¼ red chilli powder 
  • 1 pinch black salt 
  • 3-4 fresh mint leaves 
  • Mix of salt and chilli powder for final garnishing 
  • 3-4 ice cubes 

Method: 

  1. Take a mocktail mixer and add the lemon juice, black salt, and chilli powder, chop the mint leaves and gently muddle everything together. 
  2. Now add the mango juice and shake the mocktail well. 
  3. Using a lemon wedge, lightly rub the edge of a tall mocktail glass, now gently dip the edge of the glass into the red chilli and salt mix, so that the rim is covered with the spice mix. 
  4. Add the ice cubes into the glass and then pour the prepared mocktail into it. 
  5. Serve chilled immediately. 

Pomegranate Sorbet

Who doesn’t love cool icy sorbets during the summer? We all would have tasted the conventional flavours like orange or lemon flavoured. Try this unique pomegranate sorbet that is made using healthy and pure pomegranate juice. This is a recipe for children and adults alike. 

Total Time: 5 minutes to prepare. (2-3 hours of chilling time)
Serves: 5-6 servings 

Ingredients: 

  • 200ml Cold Pressed Pomegranate Juice
  • 2 tsp lemon juice
  • ½ cup sugar syrup (chashni) optional 
  • 1 pinch chat masala

Method: 

  1. Take a mixing bowl, add the pomegranate juice and lemon juice and mix it. 
  2. If the juice is naturally sweet then no need to add sugar syrup. But if you prefer additional sweetness, add the sugar syrup and mix everything well. 
  3. Add a pinch of chat masala (or black salt) just to balance the flavours. 
  4. Transfer this mixture to your ice cream moulds and set it to freeze for 3-4 hours. 
  5. After the mixture is nicely hardened, remove it from the mould. Give it a quick churn in a blender and serve immediately. 
  6. You can garnish it with fresh mint leaves. 

Apple Juice Chicken

This is a healthy and delicious chicken recipe that only needs some cold-pressed apple juice as its main hero. When you need a fuss-free and tasty meal, this chicken recipe is sure to come in handy. 

Total Time: 30 minutes
Serves: 2 

Ingredients: 

  • 200ml Cold-pressed apple juice
  • 1 cup chicken (boneless and chopped into small pieces) 
  • Salt to taste 
  • Black pepper to taste 
  • 2 tsp fresh lemon juice 

Method:  

  1. Take a saucepan, and place it on medium heat. Once the pan is hot enough, pour the apple juice in it. 
  2. Wait until the juice just begins to boil. Once bubbles begin to appear at the edges of the saucepan, add the chicken pieces to it. 
  3. Toss the chicken gently in the apple juice and let it cook in the juice. Add salt and pepper as per taste. 
  4. Cover and cook the chicken in the juice, until most of the juice evaporates and turns into an apple glaze. 
  5. Check if the chicken is done. 
  6. Finally sprinkle some lemon juice over the dish, just to balance out the flavours. Give the apple juice chicken a final toss and serve hot. 
  7. You can enjoy this chicken with a side salad.
