Indonesian Peanut Sauce with Chicken Satay

Tips to Remember: 

Coconut sugar is a healthier alternative to regular sugar, naturally, the flavour profile will have a slight coconut-like taste unlike regular processed sugar, and that is the beauty of it.

Serves: 6 servings
Total Time: 30 minutes 

Ingredients: 

  • ½ cup creamy peanut butter 
  • 1 cup coconut milk 
  • 2 tbsp lemon juice 
  • 2 tbsp soy sauce 
  • 2 tbsp coconut sugar 
  • 1 tsp grated ginger 
  • 4-5 cloves of garlic chopped 
  • ½ tsp red chilli flakes 
  • 1 kg boneless chicken, chopped into cubes 
  • 1 tsp olive oil
  • 30 satay sticks

Method: 

  1. Take a mixing bowl, add the peanut butter, soy sauce, coconut sugar, coconut milk, and lemon juice along with ginger, garlic, and red chilli flakes and mix everything well to get a smooth uniform sauce. Refrigerate the sauce until the chicken is cooked. 
  2. Take a non-stick pan, and add the olive oil to it. Place it on medium heat, once the oil is hot, add the cubes of chicken to it. You can optionally sprinkle some salt on the chicken. 
  3. Cook the chicken until it is cooked through. 
  4. Once the chicken is cooked, dip the cubes in the sauce prepared earlier. Make sure to coat each piece very well. 
  5. Pierce these chicken pieces with the satay sticks, and repeat for all chicken cubes. 
  6. You may drizzle some more sauce on the satay if you like. 
  7. Serve and enjoy while fresh.
