- 1 ripe Alphonso mango
- 1½ cups chilled yoghurt
- ½ cup fresh mint leaves
- 1 green chilli
- Salt to taste
- Black salt to taste

Method:
- Break the green chilli and put it into a chopper jar. Add mint leaves. Cut half a mango roughly and add a little water, and chop into a coarse chutney.
- Cut the remaining mango into small cubes.
- Take yoghurt in a bowl, add mint, mango mixture, salt and black salt and mix well.
- Transfer into a serving bowl, add chopped mango cubes, sprinkle crushed red chillies and serve chilled.
3. Fresh Mango Salsa

Sunshine in a bowl! This mango salsa combines the juicy sweetness of ripe mangoes with the crunch of red peppers, the sharpness of red onions, and the zing of fresh lime. - 3 ripe mangoes
- 1 medium red bell pepper, chopped

Method:
- In a serving bowl, cut the mangoes into cubes. Combine the prepared mango, bell pepper, onion, cilantro and jalapeño. Drizzle with the juice of one lime.
- Using a large spoon, stir the ingredients together. Season to taste with salt, and stir again. For best flavour, let the salsa rest for 10 minutes or longer.
4. Mango Kulfi

If lazy summer days had a dessert mascot, it would be mango kulfi. Rich, creamy, and bursting with mango goodness, this frozen treat is made by slowly reducing milk, blending in luscious mango purée, and freezing to perfection. Garnished with chopped almonds and pistachios, it’s pure bliss on a stick.

Ingredients:
- 3 cups full-cream milk
- 2 tablespoons sugar
- 1½ cups peeled and chopped mango
- Chopped almonds and pistachios (for garnish)
- Kulfi moulds
- Ice cream sticks
Method:
- In a heavy-bottomed pan, add 3 cups of milk to boil. Add 2 tablespoons of sugar and reduce the flame. Boil the milk, stirring occasionally and reduce it to half the volume.
- Take 1-½ cups of peeled and chopped mangoes in a blender and blend until smooth.
- In the cooled milk, add the mango puree and mix well.
- Pour the mixture into kulfi moulds and chill for 6 hours.
- Dip the moulds in room temperature water for 3 to 4 seconds to demould the kulfi.
- Decorate with chopped nuts and serve chilled.
