1. Instant White Chia Seed Mango Jam

Who says making jam has to be a time-consuming task? This quick and simple recipe brings the vibrant, tropical sweetness of mangoes together with the nutrient-packed goodness of chia seeds, creating a spread that’s both fresh and tangy. Perfect for lazy summer mornings, this jam comes together in a snap, so you can spend more time enjoying the sunshine and less time in the kitchen. Just a few ingredients and a little patience for the chia seeds to work their magic—it’s jam-making made easy!

Tips to Remember:

Chia seeds tend to absorb fluids, so adequate fluid consistency needs to be available to ensure apt texture and consistency in the end product.

Serves: 4-5 servings
Total Time: 25 minutes

Ingredients:

  • 2 cups of chopped ripe mangoes
  • 2 tsp lemon juice
  • 3 tsp white chia seeds
  • 3 tsp granulated sugar (optional)

Method:

  1. Take a blending jar, and add the chopped mango pieces and lemon juice. If you feel the mangoes are not sweet enough or prefer extra sweet, then add some granulated sugar; if not, then avoid the sugar.
  2. Blend everything to form a smooth creamy pulp.
  3. Transfer this pulp into a clean and dry glass jar. Now add the white chia seeds to it and mix it well.
  4. Now, place the jar in the refrigerator for some time. The chia seeds will soak up the extra liquid and give a perfectly jammy texture.
  5. You can enjoy this instant, easy and healthy mango chia seeds jam with toast or top your oats porridge with it.

2. Mango Mint Raita

Cooling, creamy, and kissed with minty freshness — mango mint raita is like a breeze on a sweltering day. Blending ripe Alphonso mangoes with chilled yoghurt and a splash of green chilli, this raita is the ideal sidekick to spicy dishes or a refreshing dip all by itself. Top with a sprinkle of crushed red chillies for a dash of drama.

Prep time: 20-25 minutes
Servings: 2

Ingredients:

Method:

  1. Break the green chilli and put it into a chopper jar. Add mint leaves. Cut half a mango roughly and add a little water, and chop into a coarse chutney.
  2. Cut the remaining mango into small cubes.
  3. Take yoghurt in a bowl, add mint, mango mixture, salt and black salt and mix well.
  4. Transfer into a serving bowl, add chopped mango cubes, sprinkle crushed red chillies and serve chilled.

3. Fresh Mango Salsa

Sunshine in a bowl! This mango salsa combines the juicy sweetness of ripe mangoes with the crunch of red peppers, the sharpness of red onions, and the zing of fresh lime. A hint of jalapeño keeps things lively. Spoon it over grilled fish, pile it onto tacos, or just grab a handful of tortilla chips and dive right in.

Prep time: 15 mins
Servings: 3

Ingredients:

  • 3 ripe mangoes
  • 1 medium red bell pepper, chopped
  • ½ cup chopped red onion
  • ¼ cup packed fresh cilantro leaves, chopped
  • 1 jalapeño, seeded and minced
  • 1 large lime
  • ⅛ to ¼ teaspoon salt, to taste

Method:

  1. In a serving bowl, cut the mangoes into cubes. Combine the prepared mango, bell pepper, onion, cilantro and jalapeño. Drizzle with the juice of one lime.
  2. Using a large spoon, stir the ingredients together. Season to taste with salt, and stir again. For best flavour, let the salsa rest for 10 minutes or longer.

4. Mango Kulfi

If lazy summer days had a dessert mascot, it would be mango kulfi. Rich, creamy, and bursting with mango goodness, this frozen treat is made by slowly reducing milk, blending in luscious mango purée, and freezing to perfection. Garnished with chopped almonds and pistachios, it’s pure bliss on a stick.

Cook time: 30 minutes
Chill time: 6 hrs
Servings: 4

Ingredients:

Method:

  1. In a heavy-bottomed pan, add 3 cups of milk to boil. Add 2 tablespoons of sugar and reduce the flame. Boil the milk, stirring occasionally and reduce it to half the volume.
  2. Take 1-½ cups of peeled and chopped mangoes in a blender and blend until smooth.
  3. In the cooled milk, add the mango puree and mix well.
  4. Pour the mixture into kulfi moulds and chill for 6 hours.
  5. Dip the moulds in room temperature water for 3 to 4 seconds to demould the kulfi.
