Tomatoes are in nearly every Indian kitchen—but keeping them fresh can be tricky. One day they’re plump and juicy, and the next they’re soft, leaky, and unusable. The good news? A few smart habits can keep soggy tomatoes at bay and make them last longer.

Here are 5 simple ways to clean and store your tomatoes the right way. 


1. Wash Only Before Use

It’s tempting to wash all your produce right after you get home. But tomatoes are best stored unwashed. When you wash and store them immediately, the moisture trapped in the crevices—especially around the stem—can lead to early spoilage and mould.

What to do instead:

  • Store tomatoes as-is.
  • Wash them only when you’re about to use them.
  • If you must wash in advance, dry them thoroughly with a clean cloth or kitchen towel before storing.

This one simple shift can extend their shelf life significantly.


2. Store at Room Temperature (For a While)

Contrary to popular belief, tomatoes don’t belong in the fridge—at least not right away. When tomatoes are refrigerated too soon, their texture changes, and the natural flavour becomes dull.

Ideal approach:

  • Keep tomatoes stem side down in a single layer on a tray or plate.
  • Place them in a cool, dry corner of your kitchen.
  • Keep away from direct sunlight or heat.

This method works well for firm, unripe or just-ripe tomatoes. Once they soften or ripen fully, they can be moved to the fridge for short-term storage.


3. Use a Breathable Storage Option

Plastic bags and sealed containers trap moisture, which accelerates spoilage. Instead, store tomatoes in containers or baskets that allow airflow.

Try:

  • Cotton or jute vegetable storage bags.
  • Woven baskets.
  • Open containers lined with newspaper or a clean towel.

These allow excess moisture to escape and reduce the chance of sogginess. Your tomatoes will thank you!


4. Separate Overripe Tomatoes

Just like bananas, one overripe tomato can spoil the whole batch. Tomatoes release ethylene gas, a natural ripening agent. When one turns mushy, it speeds up the spoilage of others around it.

Here’s what you can do:

  • Sort your tomatoes after purchase.
  • Store overripe ones separately and plan to use them first.
  • If they’re too soft to slice, turn them into a quick chutney, sauce, or purée (see below!).

Option B: Freeze whole tomatoes
