  1. Take a pack of digestive biscuits and put them in a zip lock bag, and close the bag. Crush the biscuits by pounding them with a rolling pin until they resemble crumbs.
  2. Add the biscuit crumbs to a large bowl and add butter to it. Mix the butter and crumbs together and put them in an 8-inch cake tin.
  3. Press the crumb and butter mixture tightly in the pan and level the top with a spatula.
  4. Keep it in the freezer section of the refrigerator.
  5. Take half of the cream cheese and beat well until smooth. Add a can of condensed milk to it and again mix well until combined. Add the zest of 1 lemon to the mixture and lemon juice to the mixture, and again whisk it well.
  6. Take 2/3 cup of whipping cream and whisk it until stiff peaks are formed. Add this mixture to the cream cheese mixture and fold in gently with a spatula.
  7. Put some of the cream cheese and whipped cream mixture in a piping bag with a star nozzle.
  8. Layer the mixture on the biscuit mixture and shake and tap to form an even layer on it. Level the top with a flat knife and refrigerate.
  9. Put a layer of lemon curd on top of the frozen cheesecake and pipe in the stars on the circumference of the cheesecake. Chill the cheesecake for at least 8 hours, and serve.

  1. Grind the cashews in a mixer jar.
  2. Roughly chop the pistachios in a mixer on pulse mode.
  3. Wet the saffron strands by adding a drop of milk.
  4. Take milk powder, sugar and cashew powder in a bowl.  Mix well.
  5. Add ghee in small quantities at a time and mix well.
  6. Add 2 tbsp milk if needed, and shape it into a dough.
  7. Take small portions of the dough and shape them into small balls by greasing your palms with ghee.
  8. Flatten the balls and make a tiny depression with your finger, and put some chopped pista over it and a strand of saffron.
  9. Refrigerate for an hour to retain its shape.

#3 Shrikhand Milkshake

A creamy, cooling twist on a classic!

  1. Take a small bowl and add saffron strands and crush them with your fingers to let out the colour and aroma.
  2. Grind the cardamom to a fine powder by adding a spoonful of sugar in a mixer. Soak the nuts and remove the skin from the pistachios and almonds. Crush the nuts in the mixer on pulse mode for 2 seconds.
  3. In a bowl, add milk powder, cardamom powder, icing sugar and the fresh cream from the pre-boiled milk. Mix well with a whisk until a smooth paste is formed.
  4. Cut the sides of the bread slices and cut out roundels from the bread.
  5. Cover a roundel with the milk powder mixture. Cover it with another roundel and make a sandwich or rasmalai.
  6. Prepare the milk by adding condensed milk to the cool, preboiled milk. Add the cardamom and some saffron to it.  Mix well in a blender for a minute.
  7. Dip the prepared rasmalai sandwiches into the milk and keep them on the serving plate.
  8. Pour all the leftover milk over the rasmalai to drench it.
  9. Decorate with saffron strands and some crushed nuts on top.
  10. Cool in a refrigerator and serve.
