Recipe: Whole Wheat Potato Waffles

Crispy on the outside and soft inside, these savoury potato waffles turn simple pantry staples into a delicious breakfast or snack. Serve them hot with chutney, ketchup or a creamy dip.

Ingredients

  • 2 medium potatoes, boiled and mashed
  • 1 cup whole wheat flour (atta)
  • 1/2 cup thick curd, whisked
  • 1/4 cup milk
  • 2 tbsp melted butter or oil
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp cumin powder
  • 1/2 tsp chilli flakes
  • 1/4 tsp black pepper powder
  • 2 tbsp onion, finely chopped
  • 2 tbsp coriander leaves, finely chopped
  • Salt, to taste
  • Butter or oil, for greasing

Method

  1. Add mashed potatoes, curd, milk and melted butter or oil to a bowl.
  2. Mix until smooth.
  3. Add whole wheat flour, baking powder, baking soda, cumin powder, chilli flakes, pepper and salt.
  4. Mix gently to form a thick, spoonable batter. 
  5. The batter should be thick, not runny. If it feels too stiff, add 1 tbsp milk at a time. If it is too loose, add 1-2 tbsp whole wheat flour.
  6. Fold in the chopped onion and coriander.
  7. Preheat the waffle maker properly for a crisp exterior. 
  8. Lightly grease both plates.
  9. Spoon the batter into the centre of the waffle plate. Do not overfill.
  10. Close the waffle maker and cook for 4-6 minutes, or until golden and crisp.
  11. Repeat with the remaining batter.
  12. Serve the waffles hot with mint chutney, ketchup or your favourite dip.

Quick Tip: Potato waffle recipes also work best when the batter is cooked immediately rather than left standing for long.
