The Ultimate Drumstick Recipe Collection

Often pushed into the corner of a sambar pot, drumsticks or moringa pods deserve a little more attention. Their firm, ridged pods hold on to sauces beautifully and work particularly well with coconut, peanuts, spices and tangy gravies.

So we’re going beyond the everyday sambar with four established preparations from different flavour traditions: a creamy coconut stew, a light drumstick soup, a nutty peanut curry and a hearty fish curry.

1. Drumstick & Coconut Stew

Tender drumstick pods simmered with coconut, cumin and green chillies make this mild, creamy South Indian-style curry. The coconut paste gives the dish body while mustard seeds and curry leaves bring the familiar tempering note.

Prep time: 15 mins | Cook time: 25 mins | Servings: 4

Ingredients

  • 4 drumsticks, cut into 5-6 cm pieces
  • 1 cup fresh grated coconut
  • 2-3 green chillies
  • ½ tsp cumin seeds
  • ¼ tsp turmeric powder
  • 6-8 shallots, sliced
  • 1 tsp mustard seeds
  • 8-10 curry leaves
  • 1 tbsp coconut oil
  • Salt, to taste
  • 1-1½ cups water

Method

  1. Wash the drumsticks and cut them into manageable pieces.
  2. Grind the coconut, green chillies, cumin and turmeric with a little water into a smooth paste.
  3. Heat coconut oil in a saucepan. Add mustard seeds and let them crackle.
  4. Add curry leaves and sliced shallots. Sauté until the shallots soften.
  5. Add the drumstick pieces, salt and about ¼ cup water. Cover and cook for 5-7 minutes.
  6. Add the ground coconut mixture and enough water to reach a medium-thick curry consistency.
  7. Simmer for another 5-7 minutes, until the drumsticks are tender.
  8. Remove from heat, cover and let the curry rest for a few minutes.
  9. Serve hot with steamed rice.

Tip: Drumstick pods are meant to be eaten by scraping the cooked flesh from the outer skin with your teeth rather than chewing the fibrous outer shell.

2. Drumstick Soup

A light, peppery soup made by cooking drumstick pods until tender, separating the soft pulp and blending it into a smooth, warming broth. It’s a completely different way to enjoy moringa pods beyond curries.

Prep time: 10 mins | Cook time: 25 mins | Servings: 2

Ingredients

  • 3 medium drumsticks
  • 3 garlic cloves
  • ½ tsp black pepper
  • ½ tsp cumin seeds
  • 1 tsp ghee
  • 3 cups water
  • Salt, to taste
  • 1 tbsp chopped coriander
  • 1 tsp lemon juice, optional

Method

  1. Wash the drumsticks and cut them into 5-6 cm pieces.
  2. Place them in a saucepan with water, garlic, cumin seeds and a little salt.
  3. Bring to a boil, then cover and simmer until the pods are completely tender.
  4. Remove the drumsticks and allow them to cool enough to handle.
  5. Scrape the soft pulp from the cooked pods and discard the fibrous outer shells.
  6. Blend the pulp with some of the cooking liquid until smooth.
  7. Heat ghee in a saucepan and add the blended drumstick mixture.
  8. Add black pepper and adjust the consistency with the remaining cooking liquid.
  9. Simmer for 3-4 minutes and adjust salt.
  10. Finish with coriander and a squeeze of lemon juice, if using.
  11. Serve hot.

Tip: Strain the soup if you prefer a smoother finish. Drumstick pods contain fibrous material, so removing the outer shell carefully is important.

3. Drumstick Peanut Curry

Drumstick pods meet roasted peanuts, coconut and spices in this rich, nutty curry. The roasted peanut-coconut masala gives the gravy a deeper flavour and makes it particularly good with rice, roti or dosa.

Prep time: 20 mins | Cook time: 30 mins | Servings: 4

Ingredients

  • 3 drumsticks, cut into 5 cm pieces
  • ½ cup raw peanuts
  • ½ cup grated coconut
  • 1 medium onion, chopped
  • 2 tomatoes, chopped
  • 1 tbsp ginger-garlic paste
  • 1 green chilli, slit
  • 1 tsp mustard seeds
  • ½ tsp fennel seeds
  • ¼ tsp turmeric powder
  • 1 tsp red chilli powder
  • ½ tsp garam masala
  • 1 tbsp coriander leaves
  • 2 tbsp oil
  • Salt, to taste
  • Water, as needed

Method

  1. Heat a dry pan and roast the peanuts until lightly golden. Add the grated coconut and roast briefly until fragrant. Add coriander leaves and turn off the heat.
  2. Cool the mixture completely, then grind it into a coarse paste with a little water.
  3. Heat 1 tsp oil in a pan. Add the drumstick pieces, turmeric and a little water. Cover and cook for about 5 minutes until partly tender. Remove and set aside.
  4. Heat the remaining oil in a kadhai. Add mustard seeds and fennel seeds.
  5. Once they crackle, add onion, green chilli and curry leaves, if using. Sauté until the onion softens.
  6. Add ginger-garlic paste and cook until the raw aroma disappears.
  7. Add red chilli powder, turmeric and garam masala.
  8. Add the chopped tomatoes and cook until soft and the mixture thickens.
  9. Stir in the ground peanut-coconut mixture and enough water to make a thick gravy.
  10. Simmer for about 5 minutes.
  11. Add the partly cooked drumsticks and simmer for another 3-5 minutes until completely tender.
  12. Garnish with coriander and serve.

Tip: Roast the peanuts and coconut gently. They should become aromatic and lightly coloured, not dark brown, or the gravy can turn bitter.

4. Drumstick Fish Curry

A coastal-style combination of tender drumstick pods and fish cooked in a tangy, spiced curry. The pods absorb the gravy as they simmer, making every bite of the curry more flavourful.

Prep time: 20 mins | Cook time: 30 mins | Servings: 4

Ingredients

  • 500g firm fish, cut into pieces
  • 2 drumsticks, cut into 5 cm pieces
  • 1 cup grated coconut
  • 1 medium onion, sliced
  • 2 tomatoes, chopped
  • 1 tsp ginger, minced
  • 3 garlic cloves, minced
  • 1 tsp turmeric powder
  • 1½ tsp red chilli powder
  • 1 tsp coriander powder
  • ½ tsp cumin powder
  • 1 tbsp tamarind pulp
  • 2 tbsp coconut oil
  • 1 sprig curry leaves
  • Salt, to taste
  • 1½ cups water

Method

  1. Rub the fish pieces lightly with salt and ½ tsp turmeric. Set aside for 10 minutes.
  2. Grind the grated coconut with coriander powder, cumin powder and a little water into a smooth paste.
  3. Heat coconut oil in a wide pan. Add curry leaves, onion, ginger and garlic. Sauté until the onion softens.
  4. Add the tomatoes, remaining turmeric and red chilli powder. Cook until the tomatoes become soft.
  5. Add the ground coconut mixture and water. Stir well and bring to a gentle simmer.
  6. Add the drumstick pieces, cover and cook for about 8-10 minutes until they begin to soften.
  7. Add tamarind pulp and adjust the salt.
  8. Gently place the fish pieces into the curry.
  9. Cover and cook over low-medium heat until the fish is cooked through and the drumsticks are tender.
  10. Avoid stirring vigorously once the fish goes in. Gently shake the pan instead.
  11. Rest for 5 minutes before serving.

Tip: Use a firm fish that holds its shape during simmering. Once the fish is added, gentle handling is the key to keeping the curry intact.

From coconut-rich curries and nutty gravies to a warming soup and a coastal fish curry, drumstick pods are far more versatile than their usual sambar avatar suggests. Pick a recipe, bring home some fresh pods and let this underrated vegetable take centre stage.
