These four recipes bring the chatpata fun to wholesome ingredients, making every bowl as satisfying as it is flavourful.
1. Tandoori Paneer Chaat

Smoky paneer, creamy yoghurt and tangy chutneys come together in this spicy, satisfying chaat.

Ingredients
- 200 g paneer, cut into cubes
- 1/4 cup thick yoghurt
- 1 tsp ginger-garlic paste
- 1 tsp Kashmiri red chilli powder
- 1/2 tsp roasted cumin powder
- 1/2 tsp garam masala
- 1/2 tsp chaat masala
- 1 tsp lemon juice
- Salt to taste
- 1 tsp oil
- 1 small onion, finely chopped
- 1 small tomato, finely chopped
- 2 tbsp fresh coriander, chopped
- 1/4 cup thick yoghurt, for topping
- 2 tbsp green chutney
- 2 tbsp sweet tamarind chutney
- 2 tbsp sev
Method
- Mix yoghurt, ginger-garlic paste, chilli powder, cumin powder, garam masala, chaat masala, lemon juice and salt.
- Add paneer, coat well and marinate for 15 to 20 minutes.
- Heat oil in a non-stick pan and cook the paneer over medium-high heat until lightly charred on the edges.
- Arrange the paneer in a serving bowl and top with onion, tomato and coriander.
- Add yoghurt, green chutney and tamarind chutney.
- Finish with chaat masala and sev. Serve immediately.
2. Edamame & Corn Bhel

Tender edamame and sweet corn get a fresh, spicy lift from herbs, lemon and chaat masala.
Prep time: 15 mins | Cook time: 5 mins | Servings: 4
Ingredients
- 1 cup shelled edamame
- 1 cup sweet corn kernels
- 1 small onion, finely chopped
- 1 small tomato, finely chopped
- 1 green chilli, finely chopped
- 2 tbsp fresh coriander, chopped
- 1 tsp roasted cumin powder
- 1/2 tsp chaat masala
- 1/2 tsp black salt
- 1 tbsp lemon juice
- Salt to taste
- 2 tbsp roasted peanuts, crushed
Method
- Cook the edamame according to the package instructions until tender. Drain and cool.
- Steam or boil the corn until tender and drain well.
- Combine edamame, corn, onion, tomato, green chilli and coriander.
- Add cumin powder, chaat masala, black salt and salt.
- Add lemon juice and toss well.
- Top with crushed peanuts and serve.
3. Soya Tikki Chaat

Crisp soya tikkis topped with cooling yoghurt and tangy chutneys make this a hearty chaat favourite.

Ingredients
- 1 cup soya granules
- 2 medium potatoes, boiled and mashed
- 1 small onion, finely chopped
- 1 green chilli, finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp roasted cumin powder
- 1/2 tsp red chilli powder
- 1/2 tsp garam masala
- 1/2 tsp chaat masala
- 2 tbsp fresh coriander, chopped
- 2 tbsp breadcrumbs
- Salt to taste
- 1 tbsp oil, for cooking
- 1/2 cup thick yoghurt
- 2 tbsp green chutney
- 2 tbsp sweet tamarind chutney
- 2 tbsp sev
Method
- Cook the soya granules according to the package instructions. Drain, rinse and squeeze out the excess water.
- Mix the soya granules, potatoes, onion, green chilli, ginger-garlic paste, spices, coriander, breadcrumbs and salt.
- Shape the mixture into small, firm tikkis.
- Heat oil in a non-stick pan and cook the tikkis over medium heat until golden and crisp on both sides.
- Place the tikkis on a serving plate and lightly break them into pieces.
- Top with yoghurt, green chutney and tamarind chutney.
- Finish with chaat masala, coriander and sev. Serve immediately.
4. Black Chana & Sweet Potato Chaat

Hearty black chana and sweet potato come together with fresh herbs, lemon and spices for a satisfying bowl.

Ingredients
- 1 cup cooked black chana
- 1 medium sweet potato, boiled and cubed
- 1 small onion, finely chopped
- 1 small tomato, finely chopped
- 1 green chilli, finely chopped
- 2 tbsp fresh coriander, chopped
- 1 tsp roasted cumin powder
- 1/2 tsp chaat masala
- 1/2 tsp black salt
- 1 tbsp lemon juice
- Salt to taste
- 2 tbsp roasted peanuts, crushed
Method
- Combine the cooked black chana and sweet potato in a bowl.
- Add onion, tomato, green chilli and coriander.
- Sprinkle with cumin powder, chaat masala, black salt and salt.
- Add lemon juice and gently toss without breaking the sweet potato.
- Top with crushed peanuts and fresh coriander.
- Serve immediately.
