A creamy Navratri dessert made with grated paneer, milk, cardamom and nuts instead of regular rice, making it a delicious fasting-friendly alternative to traditional kheer.

Ingredients
- 1¼ cups grated paneer
- 3 cups full-fat milk
- ½ cup sugar
- ½ tsp cardamom powder
- 2 tbsp chopped almonds
- 2 tbsp chopped pistachios
- A few saffron strands, optional
Method
- Grate the paneer and keep aside.
- Pour the milk into a heavy-bottomed pan and bring it to a gentle boil.
- Add the grated paneer and simmer for about 10 minutes, stirring regularly.
- Once the mixture thickens slightly, add sugar and cardamom powder.
- Add saffron, if using.
- Cook for another 2-3 minutes, stirring gently.
- Turn off the heat and garnish with almonds and pistachios.
- Serve warm or chilled.
