2. Tandoori Mushroom Puff Bites

Bring a little gourmet flair to your festive spread. These flaky puff pastry bites are filled with creamy tandoori mushrooms. Smoky Indian flavours make them a delicious party starter.

Prep time: 15 mins | Cook time: 25 mins | Serves: 4 (8 pieces)

Ingredients

  • 1 ready-made puff pastry sheet (thawed, approx. 200–250 g)
  • 200 g button mushrooms, finely chopped
  • 2 tbsp thick curd
  • 1 tsp tandoori masala
  • 1 tsp ginger-garlic paste
  • 1 tbsp butter

Method

  1. Preheat the oven as directed on the puff pastry pack, usually 200°C. Line a baking tray with parchment paper.
  2. Mix the mushrooms with curd, tandoori masala and ginger-garlic paste.
  3. Heat butter in a pan. Sauté the onion until soft. Add the mushroom mixture.
  4. Cook until the mushrooms release their moisture, and the mixture becomes fairly dry.
  5. Add cream, salt and cheese, if using. Cook until thick. Cool completely.
  6. Lightly flour the counter. Roll the thawed pastry sheet gently, if needed.
  7. Cut 16 equal-sized rounds using a cookie cutter or glass. Keep 8 rounds whole. Cut smaller circles from the centre of the remaining 8 to make rings.
  8. Place the whole rounds on the tray. Brush the edges lightly with water. Place one pastry ring on each round and press gently.
  9. Brush the tops with milk or beaten egg, if using. Bake according to the pack instructions, usually 12–18 minutes, until puffed and golden.
  10. Cool slightly. Gently press down any raised centres. Fill each pastry cup with the mushroom mixture.
  11. Garnish with chopped coriander and serve immediately.

Quick tip: Keep the pastry cold while shaping. If it becomes too soft, chill it briefly before baking.

Serving tip: Add the filling just before serving. This helps keep the pastry crisp.

3. Butter Paneer Masala Pot Pie

Your favourite paneer butter masala gets a festive makeover in this comforting pot pie. Creamy paneer gravy meets a golden, flaky pastry lid for a showstopper that feels special without complicated cooking.

Prep: 15 mins | Cook: 30 mins | Serves: 4

Ingredients

  • 250 g paneer, cubed
  • 1 ready-made butter masala gravy pouch (approx. 200–250 g)
  • 1 small onion, finely chopped
  • 1 tbsp butter
  • 2 tbsp cream
  • ½ tsp kasuri methi
  • 1 ready-made puff pastry sheet (approx. 250 g), thawed

Method

  1. Heat butter in a pan. Sauté the onion until soft.
  2. Add the butter masala gravy, paneer and kasuri methi. Simmer for 3–4 minutes.
  3. Stir in cream. Keep the filling thick, not runny. Cool slightly.
  4. Divide the filling among 4 oven-safe ramekins.
  5. Cut the puff pastry into squares slightly larger than the ramekins. Cover each ramekin and seal the edges. Cut a small slit on top.
  6. Brush with beaten egg or milk.
  7. Bake in a preheated oven at 200°C for 15–20 minutes, or until the pastry is puffed and golden. Follow the pastry pack’s baking guidance if it differs.
