7 Delicious and different ways to enjoy eggs

Tired of the regular omelette and boiled eggs? Egg, as you are already aware of, is a food wonder packed with nutrition that is beneficial for the bones, hair, skin and overall health. But as much as we know something is good for us, having it repeatedly can become unpalatable. To ensure you have the flavour along with the health, we have roped in Tarun Gupta, Co-Founder Henfruit who has written and shared some unique and delicious egg recipes.

1- Egg Salad Tortilla Wraps

As Mexican as an egg can get, our twist to a tortilla wrap is with eggs and chive salad as the stuffing. This goes to show how even if you chose to avoid pungent jalapeños, you can add a little punch to your salad by just adding some garlic and chives.

Ingredients Required:

  • Cream cheese – 1/3 cup
  • Kasundi mustard / or any regular mustard – 1 tbsp.
  • Ground pepper – a pinch
  • Onion, chopped – 1
  • Bell pepper, chopped – 1
  • Hard-boiled eggs – 6 -8
  • Lettuce leaves – 4
  • Whole wheat tortilla wraps – 4

How to Prepare:

  • In a large bowl, mix the cream cheese, mustard and pepper together.
  • On low heat, add one tablespoon oil to a non-stick frying pan and sauté the onions and bell pepper with a pinch of salt.
  • As the onions begin to caramelise, add the boiled eggs and mix together.
  • Remove from the heat.
  • Let the pan cool down and then add the mixture to the cream cheese dip.
  • Mix well, coating all the ingredients with the dip.
  • Take a tortilla wrap and place the lettuce leaf on it. Add the egg mixture, roll the tortilla and cut it into half.
  • Repeat for the rest.

2- Egg Yakisoba Soup

Fulfil your oriental desires with a traditional yakisoba soup topped with a fried egg. With the very first bite, it oozes out the goodness of the perfect yolk and the warmth of a nourishing soup. “Arigato”.

Ingredients Required:

  • Egg – 1
  • Yakisoba noodles – 250 gm
  • Chicken broth – 500 ml
  • Salt – as per taste
  • Pepper – as per taste
  • Carrots – 2
  • Ginger – as per taste
  • Garlic cloves – 1
  • Spring onion, chopped – 1
  • Sesame oil – 2 tsp

How to Prepare:

  • Peel and slice the carrot and chop the spring onions. Finely dice garlic and ginger.
  • Boil water, add some oil and salt and add the Yakisoba noodles. Cook and drain it out.
  • In a heated pot, add sesame oil and sauté garlic, ginger and spring onions.
  • Add chicken broth and season it.
  • Add sliced carrots and noodles and simmer it.
  • On a heated pan, crack open an egg and fry it.
  • Pour the cooked soup in a soup bowl and place the fried egg on top of the soup.
  • Its ready to serve.

3- Egg & Avocado Sushi Roll

We cannot subdue our love of Japanese food, hence, here is another healthy and wholesome recipe of cucumber avocado and egg stuffed in a sushi roll. Though rolling a sushi in itself is an art form, we believe we can go artsy every once and a while. Caution: Go easy with the wasabi.

Ingredients Required

  • Sushi rice – 2 cups
  • 1 Part Rice wine vinegar – 1 part
  • Water – 2 parts
  • Salt – 1 tsp
  • Sugar – 1 tbsp
  • Avocado – 1
  • Hard-boiled eggs – 2

How to Prepare:

  • Rinse the rice with water until the cloudy colour is gone.
  • Boil the rice in a pressure cooker on low heat for exactly 7 minutes. Remove from heat.
  • On a low heat, take a saucepan and add water, vinegar, sugar and salt together.
  • Mix well and turn the heat off before the mixture comes to a boil.
  • Add this vinegar seasoning to the rice and mix gently.
  • Take a sushi mat and spread out spoonful rice on the mat evenly.
  • Then add the chopped egg and avocado in straight horizontal lines.
  • Roll the mat giving it a soft squeeze. Roll out the mat gently and slice your sushi roll with a sharp knife.
  • There you go, your egg sushi roll is ready. 

4- Gluten Free Pancakes

This recipe is for those who love traditional American diner food and would want to avoid gluten. It involves two basic ingredients, eggs and gluten-free flour that produces fluffy, honey glazed pancakes. Crave away, everyone!

Ingredients Required:

  • Ripe banana – 1 whole
  • Eggs- 2
  • Brown rice flour – 2 cups
  • Almond milk – ½ cup
  • Sea salt -a pinch
  • Cinnamon – ½ tsp
  • Baking powder – 1 tsp
  • Vanilla extract – 10 ml
  • Coconut oil – 1 tbsp.

How to Prepare:

  • Mash a whole banana to a smooth consistency.
  • Break 2 eggs to the banana mash, add the slightly warm coconut oil and mix well. Add in the almond milk and vanilla extract. Mix the wet ingredients well.
  • Now add in all the dry ingredients and fold in slowly into the wet ingredients until it forms a smooth consistency.
  • Heat a non-stick pan. Add a dollop of coconut oil and scoop in a good helping of the pancake mix into the pan. Cook until golden on each side.
  • Your perfect gluten-free fluffy pancakes are ready.

5- Eggs Benedict

A true classic, this is one of the oldest egg recipes out there. A little healthy twist of fresh lobster instead of traditionally used bacon makes it a nutritious treat. The most interesting bit about eggs Benedict is the poached egg which is a delicate craft in itself.

Ingredients Required:

  • Cooked lobster meat – 100 gm
  • English muffins – 2
  • Eggs – 2
  • Lettuce leaf – 1 whole
  • Salt – as per taste
  • Cayenne pepper and seasoning – as per taste
  • Hollandaise sauce – 1/4th cup

How to Prepare:

  • Slice the English Muffin, toast them and place fresh lettuce leaves on top.
  • Now place the cooked lobster meat on top of it.
  • Poach the eggs in simmering water over moderate heat.
  • Remove the poached eggs and dry them with paper napkins.
  • Place them on top of the cooked lobster meat.
  • Drizzle the hollandaise sauce and season it with cayenne pepper.
  • Eggs Benedict can now be served.

5-Egg Salad

A spin-off salad that uses boiled eggs as a healthy substitute of meat or cheese! It is a fresh delight with cherry tomatoes, honey vinaigrette and salad leaves. As simple and easy as it gets! Less is more in this case.

Ingredients Required:

  • Kale leaves – as required
  • Iceberg lettuce leaves – as required
  • Yellow pepper – 1
  • Sweet corn – ¼ cup
  • Pineapple – 2 slices
  • Carrot -1
  • Eggs – 2
  • Tomatoes – 2

For Dressing:

  • White wine vinegar – 1 tbsp
  • Lemon juice – 1 tbsp
  • Sugar – ½ tsp
  • Salt – as per taste
  • Dried red chillies – as per taste
  • Honey – as per taste

How to Prepare:

  • Take a large bowl and toss in the kale leaves and iceberg lettuce together.
  • Finely chop the bell pepper, carrot, pineapple and tomato and add it into the leaves. Then add the sweet corn.
  • For the dressing, take a small cup and add one part vinegar and a little splash of lemon juice. Add in the honey to taste and the dry condiments.
  • Give it a good stir and pour the dressing over the salad and toss everything well.
  • Heat a frying pan and add some butter and break two eggs on it.
  • Cover the pan with a lid, until the egg cooks on medium heat.
  • Turn off the heat and transfer the eggs on the salad. Your egg salad is ready.

6 -Mango & Egg Ciabatta

The best fusion of Indian and Italian breakfast would be an egg sandwich which uses traditional mango pickled chutney from India as a base, crusty fresh Ciabatta bread from Italy and combines these wholesome ingredients. Dig into the glorious and healthy Mango & Egg Ciabatta!

Ingredients Required:

  • Ciabatta bread – 1
  • Pickled mango chutney – ¼ cup
  • Hard-boiled eggs – 4
  • Mustard – 3 tbsp.
  • Mayonnaise – 3 tbsp.
  • Lettuce leaves – 2 whole
  • Cheese slices – 2
  • Tomatoes, sliced – 2

How to Prepare:

  • Cut the Ciabatta in slices and toast them.
  • Layer one slice with mango chutney and another side with the mixture of mustard, mayonnaise, chives and seasoning.
  • Place the sliced boiled egg on one slice and top it with a lettuce leaf, sliced tomatoes and cheese.
  • Finally, layer the slice with mango chutney on top.
  • The scrumptious sandwich is ready to be served.

7- Scotch Eggs

Even older than eggs Benedict, this recipe is believed to have originated in the United Kingdom back in the 19th Century. Scotch eggs are possibly as close to a desk dish in India such as egg pacer with the beautiful culmination of boiled eggs covered with meat and batter deep fried to perfection.

Ingredients Required:

  • Eggs – 2 whole
  • Chicken Sausages – 100 gm
  • Flour – ¼ cup
  • Breadcrumbs – 1/4th cup
  • Salt – as per taste
  • Pepper – as per taste
  • Seasoning – as per taste
  • Vegetable oil – for deep frying

How to Prepare:

  • Boil the eggs, peel them and keep aside.
  • Mince the chicken sausage meat and mix with raw eggs and seasoning and prepare a batter. Cover the egg with flour and cover it with the meat batter.
  • Roll this in beaten eggs and cover it with breadcrumbs and leave it in the fridge to set.
  • Heat oil in a deep fry pan and fry the scotch eggs to a golden-brown perfection.
