  1. Peel and slice the bananas and add them to a blender jar together with the honey. Add 3 to 4 drops of lemon juice to avoid discolouration of the bananas.
  2. Blend the bananas to a smooth puree.  Make sure there are no chunks in the puree.
  3. Add the fresh cream to the pureed bananas and pulse the blender 6 to 8 times so that the cream is evenly mixed with the banana puree.
  4. Pour the mousse mixture into small individual serving bowls.
  5. Cover with aluminium foil and refrigerate for 3-4 hours.
  6. Serve the mousse with whipped cream, banana slices and grated chocolate.

2. Banana Appam 🍌🍯🥥

This South Indian-inspired snack gives ripe bananas a cosy makeover. Think soft, caramelised bites with crisp edges, made in an appe pan or even shallow-fried. These banana appams are perfect for evening chai, festive platters, or a nostalgic treat that reminds you of home kitchens and holidays.

Method
  1. Add the jaggery in a pan with 1-1/2 cups of water.
  2. Keep the jaggery pan on a low to medium flame. Stir until the jaggery melts.
  3. Filter the jaggery syrup using a strainer and keep aside.
  4. Chop the coconut into small bits.
  5. Heat 2 teaspoons of ghee in a pan. Add the chopped coconut bits and saute until golden brown. Keep aside.
  6. In a blender, peel and chop the bananas and blend until smooth. There should be no chunks in the puree.
  7. Add green cardamom powder, ginger powder and cumin powder. Mix very well. Add the jaggery syrup, coconut bits and rice flour. Add sesame seeds and mix the batter well with a whisk until smooth. Add baking soda and mix well.
  8. Heat the appam pan and add 1 teaspoon of ghee in each mould.
  9. With a spoon, pour the batter into the appam pan, leaving some space for the appams to rise.
  10. Keep the heat to low to medium and cook the appams covered. Turn them over when the bottom is golden brown in colour.
  11. Once done, remove them from the casserole so they stay warm.

3. Banana and Peanut Butter Ice Cream 🍌🥜🍦

Who knew ripe bananas could freeze into something so fabulous? This two-ingredient wonder needs no cream, no churner—just a blender and a little freezer time. Swirl in peanut butter for that creamy, nutty hit, and you’ve got a dreamy dessert that’s both healthy-ish and heavenly.

  2. Place frozen bananas, icing sugar, milk and vanilla extract in a blender and blend until smooth and creamy.  Add peanut butter and blend until smooth.
  3. Serve in ice cream bowls garnished with banana slices.

  4. Cool for a few minutes and enjoy.
