Biryani Tales for Eid-al-Adha: A Feast of Flavours, Faith & Festivity

Eid-al-Adha isn’t just about rituals; it’s about generosity, gratitude, and gathering. And nothing says “celebration” quite like a steaming pot of biryani gracing the festive table. Each grain of rice carries a legacy, a story steeped in regional charm, spices, and sentiment. From coastal kitchens to royal courts, biryani has taken many forms—but always kept its soul intact.

This Eid, let’s explore biryani beyond the usual. From eggs that echo comfort to soya that surprises with richness, and the sea’s bounty wrapped in spice—these recipes promise something for every kind of foodie in your gathering.


#1 Kashmiri Lamb Biryani

Prep time: 10 mins | Cook time: 40 mins | Servings: 6

Rooted in the essence of Kashmiri cuisine, this lamb biryani is a delicate balance of aromatics, floral saffron, and the deeply spiced yakhni broth. Each grain of rice is steeped in flavour from the bouquet garni and pressure-cooked to perfection with tender lamb. An elegant dish with layers of depth and a taste that lingers.

Method:

  1. Prepare the bouquet garni by adding all the ingredients into a muslin cloth and tying them together, and keep aside.
  2. Add the mutton, bouquet garni, salt and water to a pressure cooker and heat on a high flame for the first whistle, then pressure cook on low heat for 20 minutes. Let the pressure release naturally.
  3. Remove the bouquet garni with tongs. Drain the remaining mutton and stock, reserving the mutton and stock separately. Squeeze out the juices from the bouquet garni into the stock. This is the Yakhni.
  4. Add ghee to the pressure cooker and heat on a medium flame. Once heated, add cumin, cloves, peppercorn, cardamom, green chillies, cinnamon and bay leaf. Saute for 1-2 minutes until fragrant.
  5. Add sliced onions and fry on medium heat until golden brown. Add ginger garlic paste, asafoetida, fennel powder and cumin powder. Splash 2 tablespoons of water to avoid the masalas burning and sticking to the pressure cooker.  Cook for 3-4 minutes on a low flame, stirring frequently.
  6. Add mutton and dry roast for 2-3 minutes. Add curd and stir continuously for 3-4 minutes.
  7. Add rice, salt and measure 3-1/4 cups of reserved yakhni. Mix to combine. Pressure cook for 12 minutes on low heat.  Let the pressure release naturally and serve hot with raita.

#2 Keema Biryani

A rich blend of fragrant spices and juicy minced mutton, this Keema Biryani brings together bold flavours and melt-in-the-mouth texture in every layer. Method:

  1. Chop onions, tomatoes, coriander, green chillies and make ginger paste and garlic paste.
  2. In a pan, heat the oil on a medium flame. In another pot, boil a good amount of water and add the rice to the water to boil.
  3. Add cinnamon, black cardamom, green cardamom, cloves, black peppercorns and cumin seeds to the oil in the pan and saute till fragrant.
  4. Soak saffron strands in warm milk and keep aside.
  5. Add onion and cook until golden brown.
  6. Add the mutton mince and keep stirring until it turns brown.
  7. Add ginger and garlic paste to the mutton mince, tomatoes, chopped coriander leaves, red chilli powder, green chillies, salt and mint leaves and mix well.
  8. Once the rice is boiled and cooked for about 75%, strain it. Add garam masala powder and salt and mix well. Add 1/4th cup of fried onion to this mixture.
  9. In a large thick thick-bottomed pan, add ghee and 1/ 2 cooked rice to the pan and layer it with some keema gravy.  Add the remaining rice and sprinkle with the fried onions on top.
  10. Add soaked saffron for the aroma.  Cover the lid with aluminium foil and let it cook for 45 minutes on a low flame.
  11. Serve hot with spicy salan and mint chutney.

#3 Fish Biryani

Prep time: 5 mins | Cook time: 40 mins | Servings: 3

Light, fragrant, and brimming with flavour, this Fish Biryani is a regal ode to coastal kitchens. Delicate fish fillets are marinated and seared, then nestled into a coconut-infused gravy with aromatic rice, saffron, and herbs. It’s festive, fresh, and perfect for those seeking something special yet subtly spiced. Serve it up for a sophisticated twist on your Eid spread.

Method:

  1. Wash and clean the fish. Mix together all the marination ingredients. Marinate the fish and set aside.
  2. Soak the saffron in warm milk and set aside.
  3. Wash the basmati rice under running water until the water runs clear. Then soak for 45 minutes and drain.
  4. Bring 6 to 8 cups of water. Add shahi jeera, bay leaf, cardamom cloves, and 1 cinnamon stick to make the rice fragrant, and bring to a boil in a large pot of water. Pour 1 tsp of oil and add salt.
  5. Add the drained rice to the pot and cook for 75%. Drain the cooked rice in a colander.
  6. Fry the fish in a little oil on both sides until the fish is cooked and the masala turns golden. Set this aside along with any stock or oil left in the pan.
  7. Add more oil on both sides till the fish gets cooked and the masala turns golden. Stir often while you fry. Set aside some for garnish.
  8. To the same pan, add spices and fry them for a minute.
  9. Add ginger garlic paste and fry until the rawness goes away. Add chopped tomato and cook until soft. Add biryani masala and coriander powder and fry for a few minutes.
  10. Add half of the rice to the biryani pot, layer the gravy, add some chopped mint and coriander leaves and layer the fried fish. Layer the rice again and then sprinkle coriander leaves, mint leaves and fried onions, pour in the saffron milk and sprinkle the kewra water.
  11. Seal it with a foil and put it on a hot tawa. Cook on a high flame for 2 minutes.
  12. Allow the biryani to rest for about 15 minutes before serving. Serve it with onion raita.

#4 Malabar Egg Biryani

Malabar Egg Roast Masala

Method:

  1. Hard-boil the eggs and peel them.
  2. Wash the rice and soak it in water.
  3. Peel and slice onions, and wash and chop coriander and mint leaves.
  4. To make golden fried onions, heat 2 teaspoons oil and 2 teaspoons ghee in a thick-bottomed pan. Add finely sliced onions. Set the flame on low and keep frying onions until they are golden brown.
  5. After 15-20 minutes, the onions start to turn golden brown, drain and remove on a kitchen roll.
  6. To the same pan, add 1 teaspoon of oil on top of the remaining oil and ghee mixture. Add cashews and fry them until golden brown, and remove to a bowl.
  7. Add the bay leaves, cloves, cardamom, cinnamon and star anise and fry for a minute.
  8. Add the soaked rice. Fry for 3-4 minutes on low flame until the rice is coated with oil and is fragrant.
  9. Add 2 cups of hot water and the salt.
  10. Cook it covered for about 10-12 minutes on a low flame. After all, the water evaporates and the rice is almost cooked; remove it from the heat and let it cool completely.
  11. In a pan, dry roast all the ingredients of the biryani masala powder. In about 3-4 minutes, the spices will be fragrant; remove from heat and cool.  After cooling, grind them into a fine powder and set aside.
  12. In the same pan, add 1 tablespoon oil and 1 teaspoon ghee and add finely sliced onions and slit green chillies.
  13. As the onions turn translucent and are slightly browned, add ginger garlic paste and cook for 2-3 minutes.  Add all the spice powders, i.e, kashmiri red chilli powder, turmeric powder, black pepper powder and coriander powder and cook for 2-3 minutes and then add finely chopped tomatoes.
  14. Cook until the tomatoes are mushy and add the curd, finely chopped coriander leaves and mint leaves.  Save 1 tablespoon of each for the dum process.
  15. After a minute, add the prepared biryani masala powder, salt and cardamom powder.  Cook the masala for 3-4 minutes on a low flame and add the hard-boiled eggs, cut in half.  Now bring all the masala to the centre of the pan and cover the eggs and cook them on a low flame for 5-6 minutes. Remove from heat.

Layering:

  1. In a thick-bottomed pan, grease it with a few drops of ghee. Use half the cooked rice to make an even layer.
  2. Add the prepared egg masala and spread it evenly, making sure the eggs are in the centre.
  3. Cover the masala with the rest of the rice and sprinkle the fried onions and cashews on top. Add the remaining coriander and mint leaves.
  4. Cover the pan with aluminium foil and close it with a tight, heavy lid. Place it on a cast-iron pan and set it on a low flame.
  5. After 10-12 minutes, remove from the heat and gently fluff it up before serving.
  6. Sprinkle with fried onions and serve hot with a cool raita.

#5 Soya Chunks Biryani

Prep time: 50 mins | Cook time: 30 mins | Servings: 4

Think biryani can’t be meatless and magnificent? This Soya Chunks Biryani will make you think again. Juicy soya nuggets are simmered in a luscious coconut-kissed gravy and layered with saffron-tinted basmati. Ideal for vegetarians and adventurous foodies alike, this dish packs all the richness of traditional biryani, without the meat. Eid has room for all, and this one proves it with flair.

For Biryani Layers

Method:

  1. Rinse the basmati rice thoroughly in water until the water is clear of starch. Soak the rice in 1-1/ 2 cups of water for 20 to 30 minutes. Later, drain the water and set aside
  2. Chop the onions into thin slices. Wash and chop the coriander leaves and mint leaves.
  3. In a large pot, add 5 cups of water and add tej patta, cloves, cinnamon, green cardamoms, mace and salt. Bring the spiced water to a rolling boil on high heat, then add the rice. Reduce the heat to medium-high. Cook the rice grains until they are 75% done.
  4. Using a strainer, drain all the water. Rinse the rice gently in water and drain all the water. Cover the strainer and set the rice aside.
  5. In a strainer, rinse 1 cup of soya chunks a few times with water. Drain the water. Next, place the soya chunks, water and salt in a pan. Bring it to a boil and cook for 5 minutes. Drain the water, rinse the soya chunks in fresh water, and squeeze the chunks thoroughly to remove excess moisture and set aside.
  6. Take warm milk in a small bowl and add saffron strands, and set aside for 5-10 minutes.
  7. Heat ghee in a pot. Reduce the heat and add the whole spices, ie, tej patta, cinnamon, cloves, green cardamom, star anise, black cardamom and shahi jeera. Fry for a few seconds so that the spices crackle and release their flavours in the ghee.
  8. Add sliced onions, stirring often, and saute on a medium heat. Add a few punches of salt to quicken the process of cooking.  Cook until they are caramelised to a golden brown colour. Turn off the heat. Remove half of the onions and set aside.
  9. Add the ginger garlic paste and saute for a few seconds. Add the turmeric powder, kashmiri red chilli powder, coriander powder, cumin powder, garam masala powder and grated nutmeg. Mix and saute for about a minute on low heat. Add tomato puree, mint leaves, and coriander leaves.
  10. Saute until the mixture releases oil from the sides.
  11. Add the prepared soya chunks, green peas and salt. Add water and mix well. Cover the pan and simmer on medium heat for 10 minutes. Switch off the heat and add coconut milk and kewra water or rose water.
  12. Mix and cook on low heat until the gravy simmers. Do not boil.

Layering of the Biryani

  1. Remove half of the gravy from the pan and set it aside. Spread the rice evenly over the gravy in the pan. Use half the rice.
  2. Sprinkle the caramelised onions and chopped mint leaves all over. Pour the saffron-infused milk all over the rice.
  3. Seal the pan tightly with foil and cover it with a lid with a weight over it.

Dum Cooking

  1. Place the pot on a skillet and cook the biryani for minutes on medium-high heat. Then reduce the heat and cook for 30 to 35 minutes.
  2. Lightly fork the biryani to check if no water is left on the bottom; if there is water left, cook for another 5 minutes.
