Main Ingredients
For the Toasted Paneer
Method
  1. Wash and soak the rice for  30 minutes.
  2. In a pan, heat 2 tablespoons of ghee and when hot, add the cumin seeds, pepper, cloves, cardamom, cinnamon, fennel and bay leaves. Add 3 cups of water to the mixture and bring to a boil.
  3. Add 2 cups of coconut milk and the soaked rice to the mixture and cover.
  4. Simmer for 30 minutes until the rice is cooked well. Remove the whole spices.
  5. Fluff gently and add 2 tbsp of chopped coriander and mix gently.
  6. Mix the oregano, salt, chilli powder and lemon juice and add the paneer cubes to it.
  7. Heat a pan and add ghee to it. Toast the paneer cubes until golden on all sides.
  8. Add it to the pulao mix gently and fill the tiffin box when slightly cool.

🥬 Spinach Corn and Cheese Sandwich

Creamy, cheesy, and packed with iron-rich spinach and sweet corn, this sandwich is a lunchbox staple that never fails to please. Grill it until golden and crisp, and you’ve got a wholesome, veggie-packed bite in under 15 minutes.

  1. Wash and blanch the spinach by adding it to boiling water for a minute and immediately adding it to ice-cold water to retain its colour. Chop finely.
  2. Melt 2 tablespoons of butter in a pan. Add the refined flour and mix well until the flour is well roasted, and add milk to it to make a thick sauce.
  3. Add boiled sweet corn and blanched spinach to it. Mix well. Add the chilli flakes, salt and oregano and cool the mixture.
  4. Take the bread slices on a plate and spread the cooled mixture on them. Add the grated cheese and close the sandwich with another slice by gently pressing it.
  5. Add a spoonful of olive oil on top.
  6. Place the sandwich on a sandwich grill and grill it till done.
  7. Cut the sandwich into triangles and wrap them in aluminium foil.

  1. Wash and grate the carrot. Chop onion finely. Wash and chop coriander leaves. Grate the paneer.
  2. Take 2 cups of idli dosa batter in a bowl and add some salt and chilli powder to it.
  3. Take a pan and brush some oil on it and spread the batter in small circles about 4 inches in diameter and top with finely chopped onion, grated carrot and grated paneer.
  4. Cook until the lower side is well-cooked.
  5. Flip and cook for a minute.
  6. Cool and keep in the tiffin with coconut chutney and some fresh seasonal fruit in separate containers.

🍌 Banana Chocolate Chip Muffins

  4. In a small bowl, break the egg and mash the bananas into it. Whisk well and combine with the flour mixture. Add the chocolate chips to the batter, saving some to put on top.
  5. Pour the batter into muffin cups and sprinkle remaining chips on top.
  6. Bake the muffins for 10 minutes at 220°C, then turn the temperature down to 190°C and bake for another 10 minutes until the muffins spring back when touched and a toothpick inserted in it comes out clean.
  7. Remove from the oven and cool in the muffin tray for 5 minutes, and transfer to a wire rack to cool completely.
