Rainy Day Recipe: Spiced Crispy Fried Arbi Served Hot

When the skies pour and cravings strike, nothing hits the spot like a plate of hot, crispy arbi fresh off the pan. Golden on the outside, tender within, each slice of this spiced colocasia is shallow-fried to perfection and tossed in a bold blend of masalas—turning a humble root into pure rainy day comfort. Serve it as a crunchy side or savour it solo with chai—it never disappoints.

Ingredients
Method
  1. Wash and boil the arbi for at least 10-12 minutes on a high flame. You may boil it in the pressure cooker for 1 whistle.
  2. Let the arbi cool down for a few minutes. Peel off the skin. Using a sharp knife, Slice not very thin and keep aside until cooled completely.
  3. In a heavy pan, heat up the oil and slide the arbi slices in hot oil and fry until golden brown. Using a slotted spoon, drain the excess oil and remove the fried arbi chips on a paper towel.
  4. Sprinkle salt and spices generously on the fried chips while still hot.

Note:  You may vary the seasonings like garlic powder, onion powder and dried herbs like basil or oregano.
