  1. Preheat the oven to 175 degree Celsius.
  2. Melt the butter in a 9-inch skillet over medium heat, stir in the brown sugar and heat until bubbly. Arrange the pineapple rings and pecans on top and set aside.
  3. Sift the baking powder and salt together in a bowl twice.
  4. Beat the white sugar and eggs together in a bowl with a handheld mixer until light and fluffy.
  5. Alternate folding the flour mixture and pineapple juice into the egg mixture in 3 batches, beginning and ending with the flour mixture. Pour the mixture over the pineapple slices.
  6. Bake in the preheated oven for 30 to 35 minutes.  Let it cool for 5 minutes and carefully invert it onto a serving platter.

3. Piña Colada Cookie Cups (Puerto Rico) 🇵🇷🍍🥥🍪

If you like piña coladas (and yes, getting caught in the rain), these cheeky little cookie cups will be your new favourite. Packed with tropical flavours, creamy filling, a splash of rum (if you fancy), and a cherry on top — they’re basically a beach party in a bite.

Method:

  1. Preheat the oven to 180 degrees Celsius. Grease 2 muffin tins with cooking spray. In a large mixing bowl, beat butter with sugars, brown and granulated, until light and fluffy. Add eggs, vanilla and mix until evenly combined. Add flour, baking powder, cinnamon, salt and stir until just combined.
  2. Using a medium ice cream scoop, scoop the dough into muffin tins and press down with a spoon. Bake until the cookie cups are golden and set, about 15-20 minutes.
  3. While the cookies are still warm, turn them into cups. Spray the bottom of a small shot glass with cooking spray and press into the centre of each cookie. Let it cool in the pan for 15 minutes and transfer to wire cooling racks to cool completely.
  4. Open the pineapple can and drain the juice into a bowl. In a large bowl, using a hand mixer, beat cream cheese, icing sugar, pineapple juice, and rum until smooth. Fold in toasted coconut.
  5. Scoop the cream cheese filling into the cookie cups, dollop whipped cream on top and garnish each cookie cup with toasted coconut, a pineapple wedge and a cherry.

Note: For making the toasted coconut.  Scrape a fresh coconut and dry it on medium heat in a pan.  When the water content is minimal, add sugar to make it sweet and dry.  Keep on a low flame after adding sugar and stir often.  As soon as the coconut changes colour, turn off the flame and keep stirring until crisp and dry.


4. Nastar Cookies (Indonesia) 🇮🇩🍍🍪

These tiny pineapple-filled gems are the pride of Indonesian festive tables. Buttery, crumbly cookies hugging a sweet pineapple centre — they’re a labour of love with a reward of melt-in-the-mouth deliciousness. Warning: you can’t stop at just one.

Method:

  1. Drain the pineapple slices and blend them in a mixer jar to a puree.
  2. Place the grated pineapple and cloves in a pot and stir over medium heat until all the liquid is evaporated. Add sugar and lemon juice and stir on medium heat until a golden colour. Add the cornstarch and heat until well combined, and cook for 2 minutes until the mixture leaves the sides of the pan. Cool for 30 minutes in the refrigerator and make into 20 balls.
  3. Preheat the oven to 150 degrees Celsius.
  4. Combine the flour with the powdered sugar and cornstarch in the bowl of a food processor.
  5. Cut the butter into cubes and add to the food processor.
  6. Pulse to about 20 to 25 times until a coarse mixture forms.
  7. Add the egg yolks to the mixture and process until the dough comes together and balls can be formed. Divide the dough into 20 even pieces and roll into balls, and press into a 3-inch round.
  8. Place a ball of pineapple preserve in the centre of the round and close the cookie and seal the seams. Make a crisscross pattern with a knife on the top of the cookies resembling a pineapple.
  9. Bake for 25 to 30 minutes.
  10. Brush the cookies with the egg wash mixture and allow the egg wash to dry, and then apply a second coat.
  11. Bake the cookies again for 20 more minutes.  Cool and move to a wire rack to cool completely.
