  1. Preheat the oven to 180 degrees Celsius.
  2. In a large bowl, mix meat mince, salt, black pepper, salt, bread crumbs, cornstarch, garlic powder, eggs, pineapple juice, soya sauce and make about 1-inch diameter balls by wetting your hands.
  3. In a saucepan, add the brown sugar, cornstarch, pineapple juice, soy sauce, Worcestershire sauce, vinegar and pineapple pieces. Simmer on medium heat for about 5 minutes or until the sauce thickens slightly.
  4. In a baking dish, pour sauce over the meatballs and add pineapple pieces. Lightly mix the meatballs and add pineapple pieces. Bake in the oven for 30-40 minutes.

2. Malaysian Coconut-Lime Shrimp Bowl in Pineapple Juice 🥥🍍🍤 🇲🇾

  1. In a blender, add coconut milk and blend until smooth.  Remove 1-1/4 cup and set aside.
  2. To the remaining coconut milk in the blender, add chopped pineapple, 3 tbsp lime juice, garlic, 1 teaspoon salt, 1/4 tsp pepper freshly ground in a pepper mill and blend until smooth. Place it in a big bowl and toss the shrimp to marinate. Cover and chill.
  3. In a pot, add coconut milk, rice and 1-3/4 cup water and 1 tsp salt. Bring it to boil and then reduce the heat to low and simmer for about 20 minutes until the rice is tender. Remove from heat.
  4. Heat 2 tablespoons of oil in a pan. Drain the shrimp and discard the marinade. Add shrimp to the pan, add salt and pepper and cook for about 5 minutes and remove from heat. Stir in the cilantro.
  5. In another bowl, toss cabbage with 3 tablespoons of lime juice, pineapple juice, oil and salt and pepper.
  6. Serve the shrimp over rice with pineapple, cabbage and lime wedges.
  7. Chop the coriander, freshly grind the pepper, wash and clean and devein the shrimp.

3. Australian Grilled Pineapple Salsa 🍍🔥🇦🇺

  1. Cut, peel and core the pineapple into half-inch slices.
  2. Wash and chop the cilantro, finely chop the bell pepper and onion. Grind fresh pepper in a pepper mill.
  3. Grill the pineapple slices until light brown and caramelised in a pan with some cooking spray for about 10 minutes, remove from the pan and then chop them after cooling.
  4. Combine pineapple, bell pepper, onion, cilantro, jalapeno slices, lime juice, garlic, sugar, salt and black pepper together.  Refrigerate for about 1 hour to chill and blend the flavours.

  1. Wash and rinse the rice well until the water is clear. Drain all the water and soak the rice in 1 cup of water for 20 minutes. Drain and keep aside.
  2. In a pot, bring 4 cups of water to boil, add salt and oil. Add rice to the water and cook the rice without a lid on medium flame.
  3. When the rice is half-cooked, remove it from the pot and drain the extra water.
  4. Fluff the rice with a fork and set aside.
  5. Chop the pineapple into small cubes. Chop the onion, green chillies, red chillies and onion and peel the garlic and chop finely.
  6. Heat oil in a wok and add the chopped onions and saute on medium heat for a minute.
  7. Add chopped green and red chillies, garlic and finely chopped celery.
  8. Add the cashews and saute for about 3 to 4 minutes until they turn golden.
  9. Stir and sauté the pineapple cubes for 4 to 5 minutes until the moisture dries up and the pineapple is caramelised.
  10. Add freshly ground black pepper and stir. Add soya sauce and red chilli sauce and mix evenly. Add the cooked rice and season with salt.
  11. Add coriander leaves, chopped spring onions, stir and mix well.

    Loved the recipes. Each one seeming more delicious than the other. However the shrimp rice recipe is a bit unclear on whether the shrimps go into the blender raw with the coconut milk or what. Some clarity in the recipe will be good.
